Three Bean Salad

1 In a large bowl, mix the beans, celery, onion, parsley and rosemary
- 1 15-oz can cannellini beans, rinsed and drained
- 1 15-oz can kidney beans, rinsed and drained
- 1 15-oz can garbanzo beans, rinsed and drained
- 2 celery stalks, chopped fine
- 1/2 red onion, chopped fine
- 1 cup fresh, finely chopped flat-leaf parsley
- 1 Tbsp fresh finely chopped rosemary (optional)
- DRESSING
- 1/3 cup apple cider vinegar
- 1/3 cup granulated sugar
- 1/4 cup olive oil
- 1 1/2 teaspoons salt
- 1/4 teaspoon black pepper
Chicken Cacciatore (Hunter Chicken)

This is excellent and rather easy to make
- 2 - 2 1/2 lb. chicken tenders
- 2 T extra virgin olive oil
- 1 C thinly sliced onions
- 1/2 box of sliced mushrooms
- 1 can artichoke hearts, chopped
- 1 can black olives
- 3 stalks celery, chopped
- 6 garlic cloves, thinly sliced
- Salt and freshly ground pepper
- 1/3 C white wine
- 2 C peeled and chopped, firm ripe tomatoes (or canned diced or plum tomatoes in their juice)
Summer Salad

Place the dressing in a large bowl
- This salad is best made several hours before serving. The secret to its success is to
- cut the vegetables in a fine dice. A food processor makes that task quick and easy.
- 3/4 cup Lemon Pepper Dressing
- 1 bunch celery, finely chopped
- 2 cucumbers, peeled, quartered lengthwise, and finely chopped
- 2 bunches green onions, finely chopped
- 2 green peppers, seeded and finely chopped
- 1 bunch radishes, finely chopped
- 3 tomatoes
- 1 tbsp finely chopped fresh parsley (or chives)
Cream of Tomato Bisque

Melt butter and saute celery, onions and carrots until tender
- 1/4 pound butter
- 1 cup chopped celery
- 1 cup chopped onions
- 1/2 cups chopped carrots
- 1/3 cup flour
- 2 1-pound 12-ounce cans tomatoes drained and chopped
- 2 teaspoons sugar
- 1 teaspoon basil
- 1 teaspoon marjoram
- 1 bay leaf
- 4 cups chicken broth
- 1 pint whipping cream or two cups
- 1/2 teaspoons paprika
- 1/2 teaspoon curry powder
- 1/4 teaspoon white ground pepper
- Salt to taste
Gazpacho

Place tomoatoes, both peppers, onion, garlic and cucumbers in food processor or blender
- 1 16-ounce can chopped tomatoes plus 2 medium tomatoes
- 1 green pepper cored, seeded and cut into 2-inch pieces
- 1 cup roasted red bell peppers
- 1 large spanish onion peeled and chopped with some reserved for
- 2 large cloves of garlic chopped
- 1 large cucumber peeled and cut into 2 inch pieces
- 4 cups v-8 juice
- 1/2 cups olive oil
- 4 tablespoons soy sauce
- 8 drops of tabasco
- 2 hand-chopped tomatoes for texture...not in food processor
- Salt to taste
Halibut Baked in Parchment with Olives and Thyme..CLEAN DIET

Heat oven to 425˚F. Brush each parchment circle with oil
- 2 5-oz portions halibut
- Sea salt
- 1 lemon, unpeeled, sliced thinly
- 1 zucchini, sliced thin, on the diagonal
- 2 sprigs thyme
- 1/4 cup of pitted, halved kalamata olives
- 2 tbsp extra virgin olive oil
- Parchment paper, cut into two 12-inch circles
Magical Peanut Butter Cookies..Excellent and easy

Preheat the oven to 350 degrees
- 1 egg
- 1 cup sugar, or 1 1/3 cup sugar replacement
- 1 cup peanut butter, creamy or crunchy
- 2 teaspoon vanilla extract
- I added a teeny bit of salt to taste before cooking.
Greek Lemon Soup

Combine stock, water and rice in a nonreactive saucepan over medium low heat
- 4 1/4 cups of chicken stock
- 1 cup water
- 1/3 long grain white rice
- 1/2 lemon juiced and peel grated
- 2 eggs
- 1/2 lemon slices
Minnestrone Soup

Heat water and dried beans to boiling in large pot
- 1 cup water
- 1/2 cup dried kidney beans
- 4 cups chicken broth
- 2 small tomatoes chopped
- 1 medium onion chopped
- 2 small zucchini sliced
- 4 cloves garlic chopped
- 1/2 cup elbow macaroni
- 1 cup celery sliced
- 1 teaspoon dried basil
- 1/8 teaspoon pepper
- 2 bay leaves
- 4 ounces green beans 1-inch pieces
- 1 teaspoon salt
Low Cholesterol Fish Delight

Preheat ove to 450 degrees
- 1 T olive oil
- 1 fresh lime, squeezed
- 1 lb fish fillets
- Freshly ground pepper
- Chopped parsley
- Chopped black olives
- Chopped tomatoes
