Broccoli Quiche

Preheat oven to 350 degrees
- 6 ounces Canadian bacon or cooked chicken, diced
- 2 cups frozen (thawed) or raw broccoli chopped
- 1 cup part-skim ricotta cheese
- 1/2 cup egg whites (2 egg whites)
- 1/3 cup + 2 teaspoon plain nonfat yogurt
- 3 tablespoons flour
- 2 tablespoons grated Parmesan cheese
- 1/2 teaspoons baking powder
- 1/4 teaspoon salt
Salmon Salad Nicoise.....CLEAN DIET

Bring a pot of salted water to a boil, add the green beans and cook until bright green and tender - do not overcook
- 2 cups green beans, chopped into halves or thirds
- 1 salmon fillet, broiled
- 3 tbsp capers
- 1/4 cup green olives (well rinsed)
- 1 tbsp dijon mustard (additive and sugar free)
- 1 lemon
- 1 garlic clove, finely chopped
- 2 giant handfuls of mixed organic greens per serving (this recipe makes two servings)
- 3 anchovies per serving (garnished on top)
Low Cholesterol Scrambled Egg Whites

Spray large frying pan with Pam
- 8 egg whites
- 6 sliced Rosa's Canadian bacon diced
- 1/4 cup shredded, reduced fat Sargento cheddar cheese
- 2 tomatoes diced
- 1 cup sliced mushrooms
- 1/2 cup chopped broccoli
- Shredded cooked chicken
- Pepper to taste
Cucumber salad

Toss cucumber and onion slices in a large colander with sea salt
- 3 cucumbers, thinly sliced
- 1 small white onion, thinly sliced
- 2 tsp sea salt
- 2 T white or red wine vinegar
- 1 T fresh minced or 1 tsp dried dill weed
- Pinch of sea salt
Oven Roasted Salmon, Asparagus and New Potatoes

1 Preheat oven to 400°F
- 1 lb small new potatoes, scrubbed clean and halved
- 2 T olive oil
- 1/2 lb medium asparagus, trimmed and sliced on the diagonal, 1-inch long pieces
- 1 Tb chopped fresh dill
- 1 strip of lemon zest
- 1 small garlic clove, coarsely chopped
- 1/2 tsp salt
- Freshly ground pepper
- 2 salmon steaks (10 oz each), cut about 1-inch thick
- 1 lemon, cut into large wedges
Lemon Pepper Dressing

Place all ingredients in a bowl, and whisk vigorously until the mixture emulsifies
- 2 tbsp fresh lemon juice
- 1 tbsp wine vinegar
- 1/4 tsp salt
- 1/2 tsp cracked black peppercorns
- 1 tsp sugar...if needed
- 1 clove garlic, minced
- 1/2 cup olive oil
Maple Cranberry Oatmeal

In medium saucepan, bring milk and salt to a gentle boil
- 3 1/2 cups fat free milk
- 1/4 teaspoon salt optional
- 2 cups oatmeal regular
- 1/2 cup dried cranberries
- 1/3 cup maple syrup
- 1/4 cup toasted wheat germ
Garlic Roasted Potatoes

Preheat oven to 450 . Cut the potatoes into quarters lengthwise and place in a large, shallow, baking dish
- 2 pounds large potatoes peeled
- 1/4 cup olive oil
- 1/2 cup lemon juice
- 2 teaspoons dried oregano
- 3 cloves garlic chopped finely
- Salt and pepper to taste
- 1/2 cup water
Homemade Pumpkin Butter

This was super easy to make and quite delicious
- Ingredients:
- 1 (29 ounce) can pumpkin puree, approx. 3 1/2 cups or fresh
- 3/4 cup apple juice
- 1/2-1.5 teaspoons ground ginger (optional, sometimes I omit)
- 1/2 teaspoon ground cloves
- 1 cup Sucanat (or brown sugar)
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1-2 tsp fresh lemon juice
Greek Mushrooms

Place all ingredients, except the mushrooms and half the lemon juice, in a large saucepan and bring to a boil
- 2/3 cup olive oil
- 1/2 cup dry white wine
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 3 cloves garlic crushed
- 4 tablespoons chopped parsley
- 1 1/4 pounds tiny button mushrooms
- Juice of one lemon
- Chopped parsley for garnish
