Crockpot Chicken on a Bed of Potatoes

Place the sliced potatoes at the bottom of the crockpot
- 1 whole chicken
- Salt
- Rotisserie seasoning
- Rosemary seasoning
- 1 lb. potatoes, cut into thick slices
Cheese Fondue Bread Boat

Preheat the oven to 350°F
- 1 loaf sourdough bread
- 1/3 cup butter, melted
- 3 teaspoons garlic, crushed
- 180 g cream cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 1/2 cup milk
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 2 egg yolk
Salmon Patties

Preheat Oven to 425˚F. Line rimmed baking sheet with parchment or silicone liner
- 1 lb fresh salmon filet*
- Olive oil
- Garlic salt I used Lawry's Brand, to taste
- Black pepper to taste
- 1 medium yellow onion 1 cup, finely diced
- 1/2 red bell pepper seeded and diced
- 3 Tbsp unsalted butter divided
- 1 cup Panko bread crumbs
- 2 large eggs lightly beaten
- 3 Tbsp mayonnaise
- 1 tsp Worcestershire sauce
- 1/4 cup parsley finely minced1 lb fresh salmon filet*
- Olive oil

Apple 'N' Oat Cobbler

1. In a small bowl, combine the oats with 1 cup water and microwave for 2 minutes
- 1/2 cup(s) oats, old-fashioned, quick-cooking oats**
- 1 apple(s), peeled and chopped
- 2 teaspoon sugar, brown, (may substitute granulated sugar, honey, maple syrup, or sugar substitute)
- 1 1/2 tablespoon milk, fat-free
- 1/4 teaspoon cinnamon, ground
Crockpot Chicken Curry

Place vegetables in crock-pot; place chicken on top
- 5 medium potatoes, diced
- 1 green bell pepper, coarsely chopped
- 1 medium onion, coarsely chopped
- 1 lb. boneless chicken breasts, cubed
- 1 can (14.5 oz.) of no salt added tomatoes
- 1 tbsp. coriander
- 1 1/2 tbsp. paprika
- 1 tbsp. ginger
- 1/4 tsp. red pepper
- 1/2 tsp. turmeric
- 1/4 tsp. cinnamon
- 1/8 tsp. cloves
- 1 cup of low sodium chicken broth
- 2 tbsp. cold water
- 4 tbsp. cornstarch
Mexican Wedding Cookies

In a medium bowl, cream the butter and sugar
- 1 Cup butter
- 1/2 Cup white sugar (substitute confectioner's sugar)
- 2 tsp vanilla extract
- 2 tsp water
- 2 Cups flour sift for a lighter tasting cookie
- 1 Cup chopped pecans
- 1/2 Cup confectioner's sugar
Chopped Caprese Salad

Add the balsamic vinegar and honey to a small saucepan over high heat
- 10 ounces cherry or cherub tomatoes, chopped in half
- 8 ounces whole milk mozzarella, cherry sized. Chopped in half or fourths
- 1/4 cup fresh basil, chopped
- 1/2 cup good quality balsamic vinegar
- 2 tablespoons honey
- salt and pepper to taste
- (note: you can also add 1 tablespoon of olive oil if you'd like the added flavor, but it's not necessary)
