Spray a 5x11" loaf pan with non-stick cooking spray
- Peanut Chocolate Ganache Layer
- 1 cup Peanuts (toasted; salted; roughly chopped)
- 1 1/2 cups Semi-Sweet Chocolate Chips (about 10 ounces)
- 3/4 cup Heavy Cream (heated)
- Semifreddo
- 10 Egg Yolks
- 1 cup Granulated Sugar (divided)
- 1 teaspoon Vanilla Bean Paste or 1 1/2 tsp Vanilla Extract
- Pinch of Salt
- 1 1/2 cups Heavy Cream
- 1/2 cup Creamy Whipped Peanut Butter (warmed; avoid natural varieties) Reserved Chocolate Ganache
Salsa & Cream Cheese Dip

Mix cream cheese, salsa & salt until well blended
- 2 8oz pkgs Cream Cheese softened
- 1/2 Cup Salsa
- Dash of onion salt
- Corn chips
Slow Cooker Lemon Garlic Chicken

In a bowl, mix the oregano, salt, and pepper
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 2 lbs skinless, boneless chicken breast halves
- 2 tbsp butter
- 1/4 cup water
- 3 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1 tsp chicken bouillon granules
- 1 tsp chopped fresh parsle
Crockpot Chicken Shredded

- 2 pounds chicken breasts
- 1/2 a small bottle of zesty italian dressing
- 1/2 Tbsp. minced garlic
- 1 packet ranch dressing mix – mixed with 1/2 cup water
- 1/2 Tbsp. chili powder
- 1/2 Tbsp. ground cumin
Gluten Free Flourless Chocolate Cake with Peanut Brittle

Preheat the oven to 350ºF
- To Serve:
- 3 ounces bittersweet chocolate (chopped)
- 3 ounces semi-sweet chocolate (chopped)
- 1 stick unsalted butter (roughly chopped, plus additional for greasing pan)
- 1 cup granulated sugar
- 2/3 cup cocoa powder (plus additional for dusting pan)
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/2 cup heavy whipping cream (chilled)
- 2 tablespoons confectioners' sugar
- store-bought peanut brittle (broken into small pieces, to serve)
Boneless Buffalo Wings

- 8 oz. raw boneless skinless lean chicken breast, cut into 10 nugget-shaped pieces
- 1/4 cup Fiber One bran cereal (original), ground to a breadcrumb-like consistency in a blender or food processor
- 1 oz. (about 14 crisps) Pringles Light Fat Free Potato Crisps, Barbecue (or another fat-free BBQ-flavored potato chip)
- 3 tbsp. Frank's RedHot Original Cayenne Pepper Sauce
- dash onion powder
- dash garlic powder
- dash cayenne pepper
- dash black pepper
- dash salt

- LEMON SAUCE
- 1/4 cup honey
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 1 pinch of chili pepper flakes (optional, adds a slight kick)
- 1/4 cup pineapple juice
- 1 cup lemon juice (fresh is best, but bottled is fine too)
- 1 tsp garlic powder
- 2 Tbs apple cider vinegar
- zest of one lemon
- 1 tbs toasted sesame seeds
- 1/4 cup sliced green onions
