Chicken-Squash Fricassee

1 In 12-inch skillet or Dutch oven, heat oil
- 2 tablespoons vegetable oil
- 1 cut-up whole chicken (2 1/2 to 3 lb)
- 1 1/2 cups water
- 2 teaspoons instant chicken bouillon
- 1/2 teaspoon dried basil leaves
- 1 bay leaf
- 1 lb soft-shelled summer squash (crookneck, zucchini or scalloped)
- 1/2 lb fresh green beans, ends trimmed
- 2 medium onions, cut into wedges
- 1 teaspoon salt
- 1/2 cup pitted kalamata olives
- 1 tablespoon cornstarch
- 2 tablespoons cold water
Parmesan Spinach Dip

Preheat oven to 350 degrees F
- 2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry
- 1 (8-ounce) package reduced-fat cream cheese, softened
- 1/2 cup freshly grated Parmesan cheese (1 tablespoon reserved for topping)
- 1/3 cup fat-free mayonnaise
- 2 tablespoons fresh lemon juice
- 1 teaspoon garlic powder
- 1 (8-ounce) can sliced water chestnuts, drained and chopped
Wontons

Saute meat in small amount of oil until browned & crumbly
- Wonton filling:
- 2 pkgs wonton skins
- 1 pound ground pork
- 1 small can water chestnuts, (finely minced)
- 1/2 medium yellow onion, (finely diced)
- 2 stalks green onion, (finely minced)
- 2 Tbsp soy sauce
- dash pepper
- 1/4 tsp garlic powder
- 1 Tbsp. sesame oil
- 1 tsp cornstarch
- 1 Tbsp sake or dry sherry
Healthy Shrimp Piccata Pasta

Cook spaghetti according to package directions
- 6 ounces uncooked spaghetti
- 1/4 cup chopped onion
- 1 tablespoon olive oil
- 1 pound uncooked medium shrimp, peeled and deveined
- 3 ounces capers, drained
- 3 tablespoons lemon juice
- 1/2 teaspoon garlic powder
Cacciatore Chicken Thighs with Whole Grain Pasta

Place mushrooms in a small pot and cover with stock
- A fat handful of dried porcini mushrooms
- 2 cups chicken stock
- 12 chicken thighs
- Salt and pepper
- Flour, for dredging
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 to 4 large cloves garlic, sliced or chopped
- 1 teaspoon crushed red pepper
- 1 cup dry white wine
- 2 cans Italian tomatoes
- A few leaves of basil, torn
- 1 pound farro or whole wheat pasta
- 2 tablespoons butter, cut into small pieces
- A handful of parsley, finely chopped
- Pecorino cheese, freshly grated
Chocolate Chip Cookie Dough Cheesecake

Heat the oven to 350°F. Grease 9-inch spring form pan with shortening or spray with cooking spray
- 1 package Pillsbury™ Ready To Bake!™ refrigerated chocolate chip cookies with Hershey's® chocolate chips
- 2 packages (8 oz each) cream cheese, room temperature
- 3/4 cup sugar
- 2 eggs, room temperature
- 1/3 cup whipping cream
- 1/3 cup sour cream
Slow-Cooker Mushroom Swiss Steak and Gravy

1 In 3- to 4-quart slow cooker, layer onion, carrots, mushrooms and beef
- 1 large onion, chopped (1 cup)
- 2 medium carrots, sliced (1 cup)
- 1 can (4 oz) mushroom pieces and stems, drained
- 1 1/2 lb boneless beef round steak, cut into serving-size pieces
- 1/4 teaspoon pepper
- 1 can (18 oz) Progresso® Vegetable Classics creamy mushroom soup
- 1 can (8 oz) tomato sauce
Raspberry Palmier Shortcakes

1 Heat oven to 375°F. Line cookie sheet with cooking parchment paper
- Raspberry Palmiers:
- 1 can (8 oz) refrigerated crescent dinner rolls or 1 can (8 oz) Crescent Recipe Creations® refrigerated seamless dough sheet
- 1/4 cup granulated sugar
- 2 tablespoons butter or margarine, melted
- 2 tablespoons raspberry preserves, melted
- Coarse sugar
- Cream Cheese Filling:
- 2 packages (3 oz each) cream cheese, softened
- 2 tablespoons granulated sugar
- 2 tablespoons whipping cream
- Raspberry Filling:
- 1/4 cup raspberry preserves
- 1 cup fresh raspberries
- Mint leaves, if desired
SHOYU (SOY SAUCE) CHICKEN
