- 1 tablespoon sugar
- 1/4 cup creamed horseradish or 2 tablespoons fresh horseradish
- 1/4 teaspoon salt
Spicy Baked Sweet Potato

- 1 small, warm, baked sweet potato
- a pinch cayenne pepper
- 1 teaspoon brown sugar
- 1 tablespoon shredded part-skim mozzarella cheese

Ragu Alla Bolognese

This takes a fair amount of time to make, but it freezes very well, so make a large batch
- 1/2 oz Dried porcini mushrooms
- 1/2 lb Lean veal shoulder
- 1/2 lb Lean beef round; or shin
- 2 1/2 oz Pancetta; or blanched bacon
- 4 oz yellow onion
- 1 lg Carrot
- 1 lg stalk Celery
- 5 tb Butter
- 3 tb olive oil
- 1 tb Salt
- 1/4 ts Black Pepper; freshly ground
- 1/2 c Dry Red Wine
- 2 1/2 c canned plum tomatoes; Drained
- 1/2 c Heavy cream
- parmigiano; Freshly grated
- Black Pepper; freshly ground
Garlic Dill Pickles

- 9 cups pickling cucumbers, sliced
- 3 (1-quart) canning jars and lids, sterilized
- 3 grape leaves
- 3 teaspoons dill seed
- 3 cloves garlic
- 6 cups white vinegar
- 3 quarts water
- 1 1/2 cups salt
Chicken Quesadillas el Grande

In a bowl, stir together chicken, salsa, salt and pepper; set aside
- 3 to 4-lb. deli roast chicken, shredded
- 3 T. salsa
- salt and pepper to taste
- 1 onion, cut into strips
- 1 green pepper, cut into strips
- 3 T. olive oil
- 15-oz. can refried beans
- 8 10-inch flour tortillas
- 6-oz. pkg. shredded Mexican-blend cheese
- Garnish: shredded lettuce, diced tomatoes, diced red onion, sour cream, guacamole, additional salsa

In a bowl, combine beef, onion, bread crumbs, egg, catsup and pepper
- 3/4 lb. ground beef
- 1 c. onion, grated
- 1/2 c. Italian-flavored dry bread crumbs
- 1 egg, beaten
- 1/4 c. catsup
- 1/4 t. pepper
- 2 c. beef broth
- 1/4 c. all-purpose flour
- 1/2 c. sour cream
- 8-oz. pkg. medium egg noodles, cooked
- Garnish: chopped fresh parsley

Preheat oven to 350 degrees F
- Crust:
- 2 cups all-purpose flour
- 1/2 cup firmly packed brown sugar
- 1 cup (2 sticks) butter, softened
- Cheesecake Filling:
- 3 (8-ounce) packages cream cheese, softened
- 3/4 cup sugar, plus 2 tablespoons, divided
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
- Apples:
- 3 Granny Smith apples, peeled, cored and finely chopped
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Streusel Topping:
- 1 cup firmly packed brown sugar
