Cherry Chocolate Cordial Cookies

Ingredients
- 1 cup semi-sweet chocolate chips
- 3 tablespoons butter
- 1/4 cup light corn syrup
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup shortening
- 3/4 cup granulated sugar
- 3 eggs
- 1 teaspoon almond extract
- 1/2 teaspoon cherry flavor/extract
- turbinado sugar maraschino cherries

Preparation
Step 1
Preheat the oven to 350 degrees
1. Melt the chocolate chips with the butter in the microwave. Add the corn syrup and set the mixture aside to cool.
2. Mix the flour, baking powder, and salt in a small bowl.
3. Cream the shortening and sugar together. Add the eggs and extracts and beat after the addition of each egg. Continue beating until light and fluffy. Add the chocolate mixture. Add the dry ingredients and beat in. Chill the dough for several hours.
4. From round balls about the size of walnuts. Roll them in the turbinado sugar or large crystal white decorating sugar and place them on a lightly greased cookie sheets about two inches apart. Press your thumb into each to form a depression then press a maraschino cherry into the depression.
5. Bake them for eleven minutes or until done. (Do not over bake. They will still be soft and puffy.) Move them to wire racks to cool.
