Red Velvet Brownies with Cream Cheese Icing

Place brownie mix in bowl
- 1 box premium brownie mix
- 1 ounce red food coloring
- 1/4 cup buttermilk
- 1/4 cup vegetable oil
- 1/2 teaspoon vanilla
- 1/2 teaspoon vinegar
- 1 egg
Terri's Quick Beef Chili

1. Heat oil on high in Ninja
- Chili seasoning recipe (makes a lot):
- 1 lb. lean ground beef or turkey, or chicken cut into chunks
- 1/2 cup chopped onion
- 2-3 tablespoons chili seasoning mix (recipe follows)
- 1 can (14.5 ounces) tomatoes, diced, undrained
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) pinto beans, drained
- 2 cloves garlic, minced
- 1-2 tsp Green Chilies or bell pepper, chopped
- 1 tablespoon brown sugar
- Up to 1/2 cup Carrot puree
- Salt & Pepper to taste
- 1/2 cup water or stock, as needed (I usually don't add, I like it thicker)
- 6 T Chili Powder
- 2 1/2 tsp Coriander
- 2 1/2 tsp Cumin
- 3 tsp Garlic Powder
- 1 tsp dried oregano
- 1/8 tsp cayenne (skip if no heat is desired)
Chinese Pot Roast

Place roast in a resealable plastic storage bag and set it open end up in a deep bowl
- 1 (2- to 3-pound) beef eye of the round roast, trimmed
- 1/3 cup vegetable oil
- 1/3 cup soy sauce
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1 garlic clove, minced
- 1 1/2 teaspoons ground ginger
- 2 carrots, sliced 1/2-inch thick
- 1 small onion, quartered
- 1 (16 ounce) package frozen Asian stir-fry vegetables, thawed
- 2 tablespoons cornstarch

Heat oven to 375 degrees F
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1 cup butter (or margarine), softened
- 1 egg
- 2 1/4 cup flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 package (12 oz.) semisweet chocolate chips (2 cups)

Mix softened butter with dry ingredients
- 5 3/4 cup bread flour
- 1 1/8 cup granulated sugar
- 2 1/2 cup buttermilk
- 2 tsp salt
- 3 tsp baking powder
- 3 tsp baking soda
- 2 eggs
- 1 cup butter
- 1 1/2 cup raisins
- Garnish: melted butter & sugar
ORANGE-BLUEBERRY BREAD

1. Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan with shortening or cooking spray
- Bread:
- 3 cups Original Bisquick® mix
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1 tablespoon grated orange peel
- 3 tablespoons vegetable oil
- 2 eggs
- 1 cup fresh or frozen (rinsed and drained) blueberries
- Orange Glaze:
- 1/2 cup powdered sugar
- 3 to 4 teaspoons orange juice
- Additional grated orange peel, if desired

1 Heat oven to 350°F. Lightly spray bottom and sides of 13x9-inch pan with cooking spray
- 1 pouch (1 lb 1.5 oz) double chocolate chunk cookie mix
- 1/4 cup vegetable oil
- 1 egg
- 1 can (21 oz) cherry pie filling
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup sugar
- 1 container (8 oz) frozen whipped topping, thawed
Smoky "Chowda" with Fire-Roasted Corn

Heat a soup pot over medium-high heat with a turn of the pan of canola oil
- 1 tablespoon canola oil
- 1/3 pound smoky bacon, chopped
- 2 to 3 ribs celery with leafy tops, finely chopped
- 1 large onion, finely chopped
- 3 to 4 cloves garlic, chopped
- 1 starchy potato, peeled and diced
- 1 large fresh bay leaf
- 2 tablespoons fresh thyme, chopped
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dry mustard
- Salt and pepper
- 3 tablespoons flour
- 1 quart chicken stock
- 3 cups whole milk or half-n-half
- 1 bag, about 3 cups, frozen fire-roasted corn kernels or when in season, 3 ears grilled corn on the cob, scraped
- 1 pound skinless black cod or any sustainable white fish, cut into bite-sized chunks
- Chopped chives and parsley, for garnish
- Oyster crackers and Tabasco sauce, to serve

- If available, add:
- 3-4 stems & leaves of cilantro
- 2 cloves of garlic
- 1 medium to large green bell pepper
- 1 medium to large onion
- 1 medium tomato
- 3 recao leaves
- 3 ajices dulce (small sweet peppers)
Boston Baked Beans And Barbecue Restaurant Beans

About the beans. If you use dried beans, use 1/2 pound
- 6 strips thick bacon or 1/4 pound pork fatback
- 1 large onion, coarsely chopped
- 1 tablespoon Dijon-style mustard
- 2 (15 ounce) cans of Navy or pea beans
- 1/4 cup dark molasses
- 1 bay leaf
- 1/4 teaspoon ground black pepper
- salt to taste
