Chicken & Wild Rice Soup

Bring water to a boil in a large stockpot over medium-high heat
- 6 c. water
- 1 (6-oz.) pkg. long grain and wild rice mix
- 1 (2-oz.) pkg. chicken noodle soup mix
- 2 stalks celery, sliced
- 1 carrot, peeled and chopped
- 1/2 c. onion, chopped
- 2 (10-3/4 oz.) cans cream of chicken soup
- 2 c. deli roast chicken, chopped
- salt and pepper to taste
Chicken with Pineapple

Place some sauce on each chicken breast
- 2 chicken breasts
- 4-6 tbs General Tsao’s sauce
- 1/2 cup small pineapple chunks
KFC Coleslaw

Combine all of the dressing ingredients in a large bowl, whisk well
- 1/2 cup mayonnaise
- 1/3 cup granulated sugar
- 1/4 cup milk
- 1/4 cup buttermilk
- 2 1/2 tablespoons lemon juice
- 1 1/2 tablespoons white vinegar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 head of cabbage
- 1 medium carrot (about 1/4 cup)
- 2 tablespoons minced onion
Mom’s Seven-Layer Salad

Layer the lettuce, then cabbage, then carrots or cauliflower, frozen peas, dressing, cheese, and then bacon
- For the dressing:
- 1/2 head iceberg lettuce, chopped
- 1/3 of a small head of red cabbage, chopped
- 3 carrots, grated OR 1/2 head cauliflower, chopped
- 2 cups frozen peas, thawed
- 2 cups shredded cheddar cheese
- 1/2 pound bacon cooked, cooled, and crumbled
- 1 1/2 cups Miracle Whip/Salad Dressing (not mayo)
- 1/4 cup sugar
- 1 tsp salt
- 1/2 tsp pepper
Pineapple Cooler

- 2 c. pineapple chunks, chilled
- 2 c. ice cubes
- 2 Tbsp. lime juice
- 1/4 c. coconut milk
- 1/4 c. rum

- 16 oz fat free canned refried beans
- 3 item(s) (medium) avocado, Hass, finely mashed
- 1/4 tsp table salt
- 1 tsp fresh lemon juice
- 1 cup(s) reduced-fat sour cream
- 2 Tbsp fajita seasoning mix
- 1/2 cup(s) Weight Watchers reduced fat Mexican style blend shredded cheese
- 1 small fresh tomato(es), chopped
- 2 medium uncooked scallion(s), sliced
- 10 medium olive(s), black, sliced or chopped
- 2 Tbsp cilantro, fresh, chopped
Asiago Crusted Chicken

Preheat oven to 375 degrees F
- 1 1/2 cups Panko bread crumbs
- 1/2 cup grated Asiago cheese
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 1 egg
- 4 boneless, skinless chicken breasts, slightly pounded
- Cooking spray
- 1/4 cup olive oil
- 1/2 pound sliced mushrooms
- 2 tomatoes, coarsely chopped
- 1 teaspoon garlic powder

A Better Chocolate Eclair Cake

Combine sugar, cornstarch and salt in a large saucepan
- 1 1⁄4 cups sugar
- 6 tablespoons cornstarch
- 1 teaspoon salt
- 5 cups whole milk
- 4 tablespoons butter, cut into 4 pieces
- 5 teaspoons vanilla
- 2 tablespoons water
- 1 1⁄4 teaspoons unflavored gelatin
- 2 3⁄4 cups heavy cream, chilled, divided
- 14 ounces graham crackers
- 2 cups chocolate chips
- 5 tablespoons corn syrup
