Fried Chicken-Hawaiian Style

Rub salt all over chicken and let set for 30 minutes
- Cornstarch mixture:
- 3 lbs. chicken
- 1 Tbsp. Hawaiian salt (rock salt)
- 1 beaten egg
- 1/2 tsp. salt
- oil for frying, one inch deep
- 2 c. cornstarch
- 1/2 c. flour
- 1 Tbs. garlic salt
- 1 tsp. pepper
Grilled Cheese Green Chile Burger

- 1 pound 80/20 ground meat
- Salt and pepper
- 1 can diced, roasted Hatch green chiles
- 1 red onion sliced
- 1 ripe tomato sliced
- 1 cup grated cheddar cheese (granddaughters decided yellow cheese was best)
- 1 avocado, peeled and sliced

Preheat oven to 350 degrees F (175 C) and prepare 2 muffin tins with cupcake liners
- 1 cup buttermilk or buttermilk substitute*
- 2 TBS red food coloring
- 1 tsp. vanilla extract
- 1 tsp. white vinegar
- 2 1/4 cups all-purpose white flour
- 2 TBS dark unsweetened cocoa powder
- 1 1/2 tsp. baking soda
- A pinch of salt
- 12 TBS softened, unsalted butter
- 1 1/2 cups of sugar
- 2 eggs

In a wok, stir fry vegetables with oil and garlic on med high heat
- 4 packages dry ramen noodles, cracked in 4 while in package, boiled in water until soft then drained into colander.
- 1 can spam, Sliced 1 x 1/2 inch pieces or whatever leftover meats you have like 3 Redondo hot dogs, boiled and sliced.
- Kamaboko (fishcake) cut into small sizes as desired
- 3 cloves garlic, minced
- 1/2 package chop suey vegetable mix.
- 1 cup chopped cabbage.
- Scrambled eggs.
- 1 saimin soup packet dissolved in 1 cup water
- Green onions, chopped
- 1/2 cup Oyster sauce
- 2 T. olive oil.

- MASA:
- 8 green bananas
- ACHIOTE OIL:
- 1/2 cup vegetable oil
- 1 tablespoons achiote seeds
- STEW:
- 2 pounds pork butt, cut in cubes
- 2 tablespoons salt
- 1 teaspoon
- 1 1/2 teaspoon cumin

- 1 green bell peppers, chopped
- 1 bundles cilantro, chopped
- 1 clove garlic, crushed
- 3 Hawaiian chili peppers or 1 teaspoon hot sauce or to taste
- 3 cups water
- 1 small can tomato paste
- 1 can olives, seedless, whole
