Marinated Steak Nachos

Regular standard nachos are good but add some marinated steak to the mix and they become GREAT! Impress your guests...
- 1/2 cup lemon juice
- 2 tablespoons garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 (1 1/2-pound) beef flank steak
- 1 (14-ounce) package tortilla chips
- 2 cups (8 ounces) Colby Jack cheese blend, shredded (see notes)
- 2 large tomatoes, seeded and chopped
- 3 scallions, thinly sliced
Black Bean and Rice Chili

1. Cook the rice according to package directions
- 3/4 cup uncooked white rice
- 1 large onion, diced
- 2 pounds lean ground beef
- 1/2 tablespoon salt
- 1/2 teaspoon ground pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 29-ounce can tomato sauce
- 2 15-ounce cans black beans, drained
- 2 25-ounce cans diced tomatoes
- 1/3 cup brown sugar
- 1 cup water
- cilantro
- grated cheddar cheese for garnish
Mini Cheesecakes

Cream cheese in mixing bowl
- 16 oz Cream Cheese
- 1 cup sugar
- 2 eggs
- 1 tsp Vanilla
- 12 Vanilla wafers or other small cookie
- Any fruit pie filling
My Buttercream Icing

Mix the above ingredients together for 5 minutes or until well combined with your stand mixer
- 300 grams unsalted butter (approximately 3 sticks)
- 300 grams unsalted margarine
- 1 tbsp clear vanilla
- 1 squirt light corn syrup
- 750 grams powdered sugar
Pineapple and Macadamia Nut Bread

Heat oven to 350°. Grease and flour a 9x5x3-inch loaf pan
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 can (8 ounces) crushed pineapple, undrained
- 3/4 cup sugar
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 6 tablespoons melted butter
- 1 cup grated coconut, or use flaked
- 3/4 cup chopped macadamia nuts, divided
- Cinnamon sugar, for topping
Caramel Apple Oatmeal Crisp

1 Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray
- 1 pouch Betty Crocker™ oatmeal cookie mix
- 1/2 cup butter or margarine, melted
- 5 to 6 large apples, peeled, coarsely chopped (about 6 cups)
- 1 cup caramel topping
- 2 teaspoons ground cinnamon
Baked Shoyu Chicken

Salt and pepper chicken. Then flour and fry until browned
- Sauce:
- 2 pounds chicken thighs (can also use different chicken parts)
- Flour, salt and pepper (for browning)
- 1/3 can chicken broth
- 1/8 cup shoyu
- 1/8 cup mirin
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1 slice ginger, crushed
- Garnish:
- 3-4 stalks green onion, chopped
No-Cook Strawberry Freezer Jam

Thoroughly crush strawberries in a large bowl; set aside
- 7 c. strawberries, hulled
- 1 (1-3/4 oz.) pkg. light powdered pectin
- 1-3/4 c. sugar, divided
- 1 c. light corn syrup
- 1 (8-1/2-pint) freezer-safe plastic containers and lids, sterilized
Pesto-Olive Chicken

Flatten chicken slightly. Place in an ungreased 13-in
- 4 boneless skinless chicken breast halves (6 ounces each)
- 1/2 cup prepared pesto
- 2 jars (4-1/2 ounces each) sliced mushrooms, drained
- 1 can (4-1/2 ounces) chopped ripe olives
- 1 cup (4 ounces) shredded provolone cheese
Lemon-Herb Roasted Salmon

Preheat oven to 400ºF. Coat a small, shallow baking dish with cooking spray
- 1 spray(s) cooking spray
- 1 1/2 pound(s) uncooked wild pink salmon fillet(s), four 6-oz pieces about 1-inch-thick each (also known as humpback salmon)
