- 1 teaspoon pepper
- 1/4 cup salted butter, melted

- 8 regular size hot dogs, chopped into bite-size pieces
- 1 can (15 oz) whole kernel sweet corn, drained
- 1 1/2 cups shredded sharp Cheddar cheese (6 oz)

- 3 potatoes, scrubbed and cut into wedges
- 1/4 cup vegetable oil
- 1 tablespoon grated Parmesan cheese
- 1/2 teaspoon salt

Southwestern Panini

In a small bowl, mash the avocado with sugar, garlic salt and lemon juice
- 1 medium ripe avocado, peeled
- 1/2 teaspoon sugar
- 1/2 teaspoon garlic salt
- 1/2 teaspoon lemon juice
- 8 slices oat bread
- 1/2 pound thinly sliced deli ham
- 4 slices Swiss cheese
- 2 tablespoons butter

In a large bowl, beat the sugar, buttermilk, eggs, oil and coffee until well blended
- 2 cups sugar
- 1 cup buttermilk
- 2 eggs
- 1/2 cup canola oil
- 1/2 cup strong brewed coffee
- 2 cups all-purpose flour
- 3/4 cup plus 1 tablespoon baking cocoa, divided
- 1-1/4 teaspoons baking powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon baking soda
- 3/4 pound bacon strips, cooked and crumbled, divided
- 1 can (16 ounces) chocolate frosting
Skinny Chicken, Broccoli and Rice Casserole with Kale

In a large pot, add rice, water and a pinch of salt
- 1 cup basmati brown rice, rinsed & drained
- 2 cups cold water
- 1.5 lbs boneless skinless chicken breasts, cut into 1" size pieces
- 4 cups kale, coarsely chopped & packed
- 4 cups broccoli, cut into small florets
- 1 cup milk (I used 2% cow's milk, any plain milk of choice works)
- 2 tbsp cornstarch
- 1 tbsp garlic powder
- 1 tsp thyme, dried
- 1 tsp salt + a pinch
- 1/2 tsp black pepper, ground
- 1/2 cup low fat mozzarella cheese, shredded
- 2/3 cup Colby Jack/Tex Mex cheese, shredded
- Cooking spray (I use Misto)
CINNAMON CREAM CHEESE ROLLUPS

- 1 loaf of soft white bread
- 1 8 oz pkg cream cheese
- 1 1/2 cups of sugar, divided
- 1 egg yolk
- 1 tsp vanilla
- 2 tsps cinnamon (or to taste)
- 1/2 cup butter, melted

Deep Dish Pizza Casserole

- 1 pound ground beef
- 1 (15-ounce) can chunky Italian-style tomato sauce
- 1 (10-ounce) can refrigerated pizza dough
- 6 (1-ounce) slices mozzarella cheese, divided
- 1 cup frozen bell peppers and onions, thawed and drained
- 1/4 cup grated Parmesan cheese
Jamaican Pork Tenderloin

- 1/3 cup lime juice
- 1 teaspoon grated lime zest
- 2 garlic cloves, minced
- 2 tablespoons prepared yellow mustard
