Pizza Crust

Add flour, sugar, yeast and salt to kitchen aid and stir with dough hook
- 4 c. bread flour
- 2 tsp sugar
- 2 1/2 tsp yeast (or 1 packet)
- 2 tsp salt
- 1/4 c. olive oil
- 1 1/2 c. warm water (110 degrees)
Parmesan Polenta

- 4 c. chicken stock
- 2 cloves garlic, minced
- 1 c. yellow cornmeal, preferably stone ground
- 1 T. salt
- 1 tsp pepper
- 1 c. parmesan, freshly grated
- 1/4 c. creme fraiche
- 2 T. butter
- grated parmesan
Lemon Pound Cake

1.Preheat oven to 350 degrees
- For the glaze:
- 15 tbsp. unsalted butter, softened
- 3 tbsp. milk (I used 2%)
- 3 eggs
- 1 tsp. vanilla extract
- 1 tsp. lemon extract
- 1/2 tsp. almond extract
- 1 1/2 cups cake flour
- 3/4 cup sugar
- 3/4 tsp. baking powder
- Zest of 2 lemons
- 2 cups confectioner's sugar
- Juice of 2 lemons (use the lemons you used for the zest)
Fried Cube Steak

Salmon Tartare

- 1 pound skinless fresh salmon fillet
- 1/2 pound smoked salmon, thickly sliced
- 1/3 cup freshly squeezed lime juice (3 limes)
- 1/3 cup minced shallots (2 shallots)
- 2 tablespoons good olive oil
- 1/4 cup minced fresh dill
- 3 tablespoons drained capers
- 2 tablespoons Dijon mustard
- 1 tablespoon whole-grain mustard
- 2 teaspoons kosher salt
- 1 teaspoon coarsely ground black pepper
- 1 loaf seven-grain bread, thinly sliced and toasted, for serving

Morel Mushroom Risotto

- 1/2 lb. morel mushrooms
- 2 Tbsp. butter

- 2 Tbsp. minced onion or green onion

- 1/2 cup white wine
- 5 cups vegetable or chicken broth
