- 3 T. olive oil
- 1 1/2 cups chopped onions
- 2 carrots, unpeeled and chopped
- 2 T. minced garlic
- 5 large fresh or frozen from the garden tomatoes, chopped

- 1/4 cup packed chopped fresh basil leaves
- 3 cups chicken stock, preferably homemade

- 2 med eggplant, peeled and sliced thin
- 3 eggs
- 1/2 c milk
- flour

- 2 c Italian breadcrumbs
- parmesan
- garlic salt

- Marinara, 1 whole large recipe (you won't need it all in the casserole)
- 2 c. mozzarella, shredded
- 1 c. provolone, shredded

- 11 cups low-salt chicken broth

- First Layer
- 1 can refried beans
- 1 1/2 tsp. cumin
- 1/2 tsp. chili powder
- Second Layer
- 2 Avocados
- 2 tsp lemon juice
- 1/2 - 1 tsp Lawry's seasoned salt
- 1/4 cup minced onion
- dashes of Tabsco
- 2-3 T. salsa
- Third Layer
- 6 T. sour cream
- 4 T. mayo
- 1 sm. minced onion
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp garlic salt
- 1/4 tsp lemon pepper
- 1/2 tsp Tabasco
- 2 tsp paprika
- 1/4 tsp. oregano
- Four th Layer
- 1 cup shredded Monterey Jack
- 1 cup shredded Cheddar

- Black olives - chopped fine

BLT Pasta Salad

Add all ingredients except bacon to cooled pasta
- 1 (16) oz. pkg medium seashell pasta, cooked
- 1 lb bacon, cooked and crumbled
- 1 small red onion, chopped
- 2 cups steamed peas, cooked
- 1 pkg grape tomatoes, cut in half
- Ranch dressing to taste (I used the buttermilk recipe pkg)
- Salt and pepper to taste
- Spicy hot mayo (optional)

- 1 small garlic clove, minced
