Potato Pancakes

In medium bowl combine eggs, milk, flour, baking powder, onion salt and pepper
- Optional:
- 2 large eggs, beaten well
- 2 T. milk
- 2 T. flour
- 1/2 tsp. baking powder
- 1 1/4 tsp. onion salt
- 1/8 tsp pepper
- 1 lb (2 large) raw potatoes, peeled
- strips of bacon, cut into squares
- Sour cream
- applesauce
Meat Loaf

Combine first 8 ingredients
- 2 beaten eggs
- 1 8 oz tomato sauce
- 1/2 cup cracker crumbs
- 1/4 cup onion, finely chopped
- 2 T. green pepper, chopped
- pepper
- 1 tsp salt
- dash dried thyme
- dash dried majoram
- 1 1/2 lb ground beef
Green Goddess Dressing

In blender or food processor, combine all ingredients
- 1/2 c. fresh flat leaf parsley
- 1/2 c light mayo
- 1/4 c. low fat sour cream
- 1 T. fresh tarragon leaves
- 1 T. Champagne or white wine vinegar
- 1 T. water
- 1 tsp anchovy paste or 1 anchovy fillet
- 1/4 tsp freshly ground pepper

- 1 c chopped yellow onion (1 onion)

- 1 1/2 pounds Italian sausage, casings removed
- 1 (28-ounce) can crushed tomatoes in tomato puree
- 1 (6-ounce) can tomato paste
- 1/4 cup chopped fresh flat-leaf parsley, divided
- 1/2 cup chopped fresh basil leaves
- 1 teaspoon oregano
- 2 teaspoon kosher salt
- 3/4 teaspoon freshly ground black pepper
- 3/4 (1 pound) lasagna noodles
- 15 ounces ricotta cheese
- 3 to 4 ounces creamy goat cheese, crumbled
- 1 pound frozen chopped spinach
- 1 cup grated Parmesan, plus 1/4 cup for sprinkling

Divine Mac and Cheese

Preheat oven to 325 Cook pasta 2 minutes before suggested time, drain
- 1 lb cavatappi, elbow or penne pasta
- 5 T. butter
- 12 oz gruyere, grated
- 1 qt half and half
- 4 egg yolks, lightly beaten
- 1/8 tsp ground nutmeg
- 1 c. panko bread crumbs
Linzer Cookies

Preheat oven to 350. Toast walnuts until fragrant, let cool a bit and pulse with 1/4 c
- 3 oz walnuts
- 1/2 c. packed brown sugar
- 2 1/2 c. flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 2 sticks butter, softened
- 1 large egg
- 1 tsp vanilla
- 1 - 12 oz jar good raspberry jam
Chicken/Turkey Parmesan

Mix everything together and form into a loaf on a sprayed baking sheet
- 1 lb ground turkey or ground chicken (I like turkey better)
- 2 finely chopped garlic cloves
- 1/2 chopped onion
- 2 eggs
- 1/4 c. seasoned Italian bread crumbs
- 1/2 cup marinara sauce, homemade preferred, additional for top
- 1/2 tsp of oregano
- 3/4 cup of small cubed asiago cheese
- a handful of grated romano cheese
- fresh chopped basil and parsley
- salt & pepper
- fresh mozzarella slices
Blueberry Blue Cheese Spread

Place dried berries in a small bowl
- 1/2 cup dried blueberries
- 1 cup boiling water
- 1 8-oz. pkg. cream cheese, softened
- 6 oz. blue cheese, coarsely crumbled
- 2 green onions, chopped
- 1 clove garlic, minced
- 1/2 cup coarsely chopped pecans
- Assorted whole grain crackers or cracker bread, broken
Baby Mixed Greens with Goat Cheese & Walnuts

- oz mixed baby greens
- 4-6 oz crumbled goat cheese
- 1/2 c. dried cranberries
- 1/2 c. roasted walnuts
