Asparagus & Tomato Salad with Feta

Dave Mason's recipe!
- Vinaigrette
- 1 T. Dijon mustard
- 2 T. champagne vinegar
- 1/2 tsp kosher salt
- 1/8 tsp pepper
- 1/2 c. olive oil
- 1 lb asparagus
- 1 pt grape or cherry tomatoes
- 3 slices country style bread - cut into cubes
- 1/2 c. crumbled feta
- 2 T. chives, chpd
Chili-Rubbed Skirt Steak with Tomato Corn Salad

Season steak with salt, pepper and chili powder
- Salad:
- 1 lb skirt steak
- salt & pepper
- 2 tsp chili powder
- 2 T. olive oil
- 2 c. diced plum tomatoes
- 1/2 c. corn
- 2 T. red onion, diced
- 2 tsp jalapenos, dieced
- 1/4 c. olive oil
- 2 tsp. balsamic vinegar
- 1 tsp. chili poweder
- salt & pepper
- cilantro
Bananas Foster

In a large skillet, melt butter
- 1 stick butter
- 1/2 cup brown sugar
- 4 bananas peeled, halved, and cut lengthwise
- 1/4 cup dark rum
- Ice cream, optional
Spinach Stuffed Veal or Pork Chops

Stuffing: In a large saute pan over medium heat, heat olive oil and cook the onion until soft, about 5-6 minutes
- Stuffing:
- 1 T. olive oil
- 1/2 c. onion, finely chpd
- 2 tsp garlic, minced
- 2 plum tomatoes, cored, seeded and chpd
- 10 oz fresh baby spinach
- 3 slices prosciutto (about 2 oz), finely chpd
- 1/2 c. fontina cheese, coarsely grated
- 1/2 tsp kosher salt
- 1/4 tsp fresh ground pepper
- Rub:
- 2 tsp fresh rosemary, finely chpd
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground pepper
- 4 veal or pork chops, about 3/4 pound each and 1 1/4- 1 1/2" thick

- 1/4 small head cabbage, sliced (about 3 cups)
- 4 oz pancetta, diced
- 1 c. dried cannellini beans, picked over and rinsed
- 1/4 c. tomato paste
- 1/2 c. grated parmesan plus 2" piece of rind
- kosher salt and fresh ground pepper
- 5 thick slices crusty bread
- 1/4 c. fresh parlsey, chpd
- 3 T. EVOO
- 3 cloves garlic, sliced
Sausage & Roasted Veggie Penne Pasta

Preheat the oven to 400 degrees F
- 1 sweet onion, cut into wedges
- 1 medium zucchini, sliced in 1/2 lengthwise
- 1 red bell pepper, cheeks removed
- 1/2 pound button mushrooms, stemmed
- 2 1/2 tablespoons olive oil, divided
- Kosher salt and freshly ground black pepper
- 1/2 pint grape tomatoes, washed and dried
- 2 sweet or hot Italian sausages, thinly sliced or casings removed
- 1/4 cup white wine
- Fresh basil, chopped (optional)
- 12 ounces whole-grain penne, cooked according to package instructions, 1/2 cup pasta water reserved
- Freshly grated Parmesan, for garnish
Blue Cheese/Tarragon Dressing

Blend first 5 ingredients adding EVOO and salt and pepper to taste
- 2 oz blue cheese
- 1/2 c. buttermilk
- 1 T. champagne vinegar
- 1 T. tarragon, chpd
- 1/2 scant tsp. cumin
- 1/2 c. EVOO
- salt and pepper to taste
Banana Bread

The BEST banana bread!
- 2-3 very ripe mashed bananas
- 2 eggs
- 1 3/4 cup flour
- 1 1/2 cup sugar
- 1 cup walnuts, chopped
- 1/2 cup oil
- 1/4 cup + 1 T. buttermilk (if you don't have buttermilk, add some vinegar to milk and let sit for a couple minutes to curdle)
- 1 tsp. baking soda
- 1 tsp. vanilla
- 1/2 tsp. salt

- 1 lb ground round
- 1 lb Italian sausage
- 2 large garlic cloves, chopped fine
- 8 oz mushrooms, chopped pretty fine
- 1 pkg froz chopped spinach
- 1/4 c. fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp pepper
- 2 raw eggs
- 1 cup parmesan
- 4 cups mozzarella
