Penne Puttanesca

Cook pasta in lightly salted water
- 3/4 lb penne pasta
- 1 5 oz can tuna, packed in olive oil
- 4 garlic cloves, minced
- 1 28 oz can, crushed tomatoes
- 1/2 c pitted green or black olives, halved
- 2 T. capers, drained
- 1/4 tsp crushed red pepper(or to taste)
- Italian flat leaf parsley
Orecchiette with Spinach and Goat Cheese

Boil the orecchiette in large pot of salted water until al dente
- 1 lb orecchiette
- 8 oz spinach
- 16 oz grape or cherry tomatoes
- 6 oz goat cheese
- 1 c. parmesan
- 1 tsp salt
- 3/4 tsp pepper

Grilled Cheese - Pioneer Women's

- 1 Tablespoon Dijon Mustard, to taste
- 1 Tablespoon Mayonnaise, to taste
- 1 whole Tomato
- 1 whole Red Onion, Small
- 4 slices Mild Cheddar
- 1 can (4 Oz.) Whole Green Chilies
- 4 slices Provolone
- 4 slices Rye Bread
- Butter
Chicken Penne with Tomato Garlic Cream Sauce

Cook penne pasta according to directions, drain
- 3/4 lb penne pasta
- 2 T. butter
- 1 onion, thinly sliced
- 1/2 tsp. red pepper flakes
- 2 cloves garlic, minced
- 1 can (28 oz) diced tomatoes, drained
- 2 cups half and half
- 1 cup frozen peas
- 1/2 tsp salt
- pepper
- 1 roaster chicken (about 2 lbs) skinned and shredded into bite size pieces
Veggie Goat Cheese Quiche

Cut veggies to even sizes and toss with olive oil, salt and pepper and roast at 400 until slightly tender
- 1 sm eggplant
- 1 zucchini
- 1 red pepper
- 4 portobellos
- goat cheese
- pinch of salt, pepper and nutmeg

- 1 cup cream
- pie crust
Creamed Corn

In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter
- 2 -10 oz frozen corn, thawed
- 1 c. Heavy cream
- 1 tsp salt
- 1/4 to pepper
- 2 T sugar
- 2 T butter
- 1 c whole milk
- 2 T flour
- 1/4 c Parmesan
Chicken Paprika & Dumplings

- Dumplings:
- 1 med onion, chopped
- 1 stick butter
- 6 chicken breasts
- 1 carrot
- 2 bouillon cubes
- paprika
- 1 T. flour
- 16 oz sour cream
- 2 eggs
- 1 c. warm milk
- 1/4 c. warm watter
- 1 T. butter, melted
- 1 T. yeast
- 2 -3 slices day old bread, cubed
- 4 c. flour
- 1 tsp sugar
- 1 tsp salt
Pretzel Crusted Pickle Chips

Mix all ingredients for the sauce, set aside
- Sauce:
- vegetable oil for frying
- 6 large dill pickles, sliced diagonally into 1/4" thick rounds
- 2 c salted mini pretzels
- 2 lg eggs
- 1/2 c flour
- celery salt
- 1/4 c red onion, finely chpd
- 3 T spicy brown mustard
- 1 1/2 T yellow mustard
- 3 T mayo
- 1/2 tsp paprika
- 3/4 garlic powder
- kosher salt

- Glaze:
- 4 cups Jonathan apples, peeled and cut into about 1" chunks
- 1/2 cup oil
- 2 cups sugar
- 2 eggs, beaten
- 1 tsp vanilla
- 2 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 cup walnuts, chopped
- 3 c powdered sugar
- 1 tsp vanilla
- 2-3 T milk

Recipe from Proud Italian Cook
- 8 to 10 cups of chicken/ vegetable stock
- 1 chopped onion
- 2 carrots chopped
- 1 large celery celery stalk with greens chopped
- 1 head of dark kale sliced thin
- 6 cloves of chopped garlic
- 1 fennel bulb chopped
- 1 or 2 leeks cleaned and chopped
- 2 cans of cannellini beans, drained
- 2 diced red potatoes
- 1/2 head of savoy cabbage sliced thin
- 1 large zucchini chopped
- 2 cups of diced canned tomatoes
- Day old bread, (optional)
- A generous handful of grated parmesan cheese
- parmesan rind, (they sell the cheesey rinds at my Whole Foods, I pick some up everytime I go there and stick them in my freezer for soups all winter. If you can't find them just add more grated cheese.)
- Fresh rosemary, thyme and red pepper flakes, you could also add sage, plus salt and pepper to taste.
