Baked Macaroni & Cheese

Cook macaroni and drain. Meanwhile melt butter and whisk in flour, mustard and salt
- 7 oz creamettes
- 2 T. butter
- 3 T. flour
- 1 tsp. dry mustard
- 1 tsp salt or seasoned salt
- 2 3/4 cup milk
- 2 c. sharp cheddar, shredded
- 1/2 cup bread crumbs
- 3 T. butter
German Chocolate Cake Frosting

- 1 1/3 cups evaporated milk
- 1 1/3 cups sugar
- 4 egg yolks, beaten
- 2/3 cup butter
- 1 1/2 tsp vanilla
- 1 1/3 cups flaked coconut
- 1 1/3 cups pecans, chopped
Tilapia Milanese

Preheat oven to 425. Soak the fish in a bowl with the milk and 2 cups ice for 15 minutes
- 4 - 6 oz tilapia fillets
- 1 1/2 c. milk
- 1 c. flour
- kosher salt and fresh pepper
- 3 large eggs
- 6 slices white bread, torn into pieces
- 1/3 c. fresh parsley
- finely grated zest of 1/2 lemon, plus lemon wedges for serving
- 5-6 T. EVOO
- 4 T. butter

Baked Fontina

1.Adjust top rack of the oven so that it sits about 5 inches under the broiler unit
- 1 1/2 lbs Italian fontina, rind removed and cubed into 1-inch pieces
- 6 cloves garlic, thinly sliced
- 1 tbsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- 3 tbsp extra virgin olive oil
- 1/2 tsp Kosher salt
- 1/2 tsp freshly ground black pepper

- 3 eggs, beaten

- Crust:
- 1 1/4 cup graham cracker crumbs
- 1/4 cup butter, room temp
- 1/4 cup sugar
- Topping:
- 1 cup sour cream
- 2 T. sugar
- 1 tsp vanilla
Linguine with Shrimp, Asparagus and Grape Tomatoes

Giada recipe - tweaked
- 1 lb linguine
- 2 T. olive oil
- 2 - 12 oz bags cherry tomatoes, stemmed and halved
- 1/2 tsp kosher salt
- 1/2 tsp pepper
- 1/2 tsp red pepper
- 3 large garlic cloves, smashed and chopped
- 1/2 c dry white wine
- 1 lb asparagus, cut into 1 1/2" pieces on the diagonal
- 1 lb shrimp, peeled and deveined
- 1/2 c fresh basil, chpd
- 1/2 c. fresh mint, chpd
- 2 tsp fresh oregano, chpd

Gnocchi - ricotta

Combine and roll into 1/2" rope, use pizza cutter to cut into 1" pieces
- 2 lbs Ricotta, drain overnight, whip until fluffy
- 1 lb Duram Semolina flour
- 1 T. salt

- Garnish:
- 4 T. oil
- 1 cup onion, chpd
- 1 clove garlic, minced
- 2 slices bacon, chopped
- 1/2 cup green pepper, chopped
- 1 lb. grd beef
- 1 lg can tomatoes, diced
- 6 oz tomato paste
- 1 tsp. sugar
- 2 tsp salt
- 2 T. chili powder, diluted with 2 T. warm water
- 1 lg can red kidney beans, drained
- shredded cheese, jalapenos, sour cream and chopped onions
