CakePreheat oven to 350 degrees F
- LEMON CAKE
- 2 cups all-purpose flour
- 2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup butter 1 and
- 1/4 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 3/4 cup milk
- 3 to 4 drops lemon food coloring if desired)
- LEMON CURD FILLING 1 tablespoon lemon zest 1/2 cup fresh lemon juice 1 tablespoon cornstarch 6 tablespoon butter 3/4 cup granulated sugar 4 egg yolks beaten
- LEMON BUTTERCREAM FROSTING
- 4 cups confectioners' sugar
- 1 teaspoon lemon zest
- 1/2 cup butter softened
- 2 tablespoons fresh lemon juice
- 2 tablespoons milk chopped nuts optional

- ¼ cup sugar
- ¼ cup malt vinegar
- 2 tablespoons distilled white vinegar
- 1 teaspoon kosher salt
- 2 small shallots, thinly sliced
- 1 Fresno chile, thinly sliced into rings, seeds removed
- 1 jalapeño, thinly sliced into rings, seeds removed
- 1 small cucumber, cut into ½-inch spears
- Pickled Red Onion
- 1 dried chile de árbol

Quinoa Salad With Peaches

Bring 1 1/2 cups water to a boil in a medium saucepan; add 3/4 cup uncooked quinoa
- 1 1/2 cups water
- 3/4 cup uncooked quinoa
- 1/4 cup minced red bell pepper
- 1/4 cup chopped green onions
- 3 tablespoons fresh lemon juice
- 1/2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1 1/2 teaspoons honey
- 1/4 teaspoon black pepper
- 1 sliced ripe peach

- 2 cups cantaloupe chunks (1 inch)
- 2 cups seedless watermelon chunks (1 inch)
- 1 cup blueberries
- 1 cup seedless green grapes
Grilled Calamari with Pea Purée and Pea Salad

Clean 2 tubes of calamari and blanch in boiling water for 1 min
- 2 cleaned tubes of Calamari
- 8 oz. of Paesano extra virgin olive oil
- 1/2 medium white onion, diced
- 1-cup fresh peas
- 4 oz. of julienned Prosciutto di Parma
- 10 cleaned, blanched, and julienned snap peas
- 3 green endive leaves
- 3 red endive leaves
- Sea salt and fresh ground black pepper
- 1 clove of chopped garlic
- Fresh basil and parsley (for calamari marinade)
Backyard BBQ Dry Rub

In a medium bowl, combine all ingredients
- 1/2 c. kosher salt
- 1/2 c. packed dark-brown sugar
- 1/3 c. ground cumin
- 1/4 c. ground pepper
- 1/4 c. sweet paprika
- 1/4 c. dried thyme
- 1/4 c. chili powder
- 2 tbsp. ground coriander
- 4 tsp. ground cinnamon
My Favorite Tomato Sauce

In a large saucepan, heat the olive oil over medium-high heat
- 1/4 cup extra-virgin olive oil
- 2 small onions, peeled, trimmed, and minced
- 6 garlic cloves, minced
- 2 tablespoons tomato paste
- 4 pounds Roma tomatoes, peeled, seeded, and diced
- 2 cups chicken stock or good-quality canned chicken broth, heated
- 12 to 16 fresh basil leaves, washed and dried
- 12 tablespoons (1 1/2 sticks) unsalted butter, cut into small pieces
- Kosher salt (to taste)
- Freshly ground black pepper
Cranberry Meatballs

Bake the ingredients for meatball at 350 degrees for 20-25 minutes
- Meatballs:
- 2 eggs, beaten
- 1/3 cup ketchup
- 1 tbsp parsley
- 1/2 tsp salt
- 2 pounds ground pork
- 1 cup corn-flake crumbs
- 2 tbsp soy sauce
- 2 tbsp onion
- 1/4 tsp pepper
- Sauce:
- 1 can (16 oz) jellied cranberry sauce
- 1 cup ketchup
- 3 tbsp brown sugar
- 1 tbsp lemon juice
Broccoli Salad
