- 8 cups finely chopped cabbage
- 1/4 cup carrot, shredded
- 1/3 cup sugar
- 1/2 teas. salt
- 1/8 teas. pepper
- 1/4 cup milk
- 1/2 cup mayonnaise
- 1/4 cup buttermilk
- 1 1/2 tbls. white vinegar
- 2 1/2 tbls. lemon juice
Lemongrass Beef Skewers

1. Soak 8 bamboo skewers in cold water for 30 minutes
- 3 lemongrass stalks, bottom 4 inches only., minced
- 3 tablespoons plus 1 1/2 teaspoons fish sauce
- 2 tablespoons plus 1 teaspoon packed light-brown sugar
- 1 garlic clove, minced
- 1 tablespoon vegetable oil
- 1 pound boneless sirloin, trimmed of excess fat
- 1/4 cup roasted salted peanuts (about 1 ounce), crushed
- 1/2 English cucumber, thinly sliced on the diagonal (optional)
- Fresh mint and basil sprigs, for serving
- Bibb or Boston lettuce leaves, for serving
- Lime wedges, for squeezing

Place a medium, heavy soup pot over medium heat
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 shallots, chopped
- 1 sage leaf
- 2 (15-ounce) cans cannellini beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 4 cloves garlic, cut in 1/2
