Shortbread Cookies

This was a cookie that was made by the thousands at a bakery for an annual festival
- Cream Cheese Frosting:
- 1 cup butter, softened
- 2 cups flour
- 1/2 cup superfine sugar
- 2 tbsp. cornstarch
- 8 oz. pkg. cream cheese, softened
- 1/2 cup butter, softened
- 2 tsp. vanilla
- 16 oz. pkg. powdered sugar
- optional: few drops of food coloring
- With electric mixer on medium speed beat cream cheese and butter together. Add vanilla and mix well. On low speed, add powdered sugar until mixed. Beat on high speed for one minute. Tint if desired.
Lobster Macaroni and Cheese

Sweat the onion and shallot in the butter until translucent
- Béchamel
- 1 quart milk
- 3 ounces flour
- 3 ounces butter
- 1 small onion, diced fine
- 1 shallot, diced fine
- 1 bay leaf
- 1 small bunch thyme
- 5 whole peppercorns, cracked in half
- 2 cloves of garlic
- 8 stems of parsley
- Kosher salt and white pepper, to taste
- Simmer the milk with the thyme, parsley stems, peppercorns, garlic and bay leaf. This should simmer for about 20 minutes to infuse the flavors of the aromatics.
- 1 lobster tail (10 oz.) poached in white wine and a lemon
- 1/4 lb. corkscrew pasta (cavatappi)
- 2 shallots, diced
- 2 ounces chardonnay wine
- 1/4 lb. apple wood smoked bacon, cooked and diced
- 1/4 lb. gouda cheese, shredded
- 1/4 lb. cooper cheese, grated
- 1/4 lb. gruyere cheese, grated
- 1/4 lb. cheddar cheese, grated
- 1/4 lb. Asiago cheese, shredded and divided
- 1/4 lb. panko bread crumbs
- parsley, chopped for garnish
- Tabasco sauce to taste
- Old bay seasoning to taste
- 1/4 cup dried sherry
Spice Cookies with Pumpkin Dip

In a mixing bowl, cream butter and sugar
- PUMPKIN DIP:
- 1-1/2 cups butter or margarine, softened
- 2 cups sugar
- 2 eggs
- 1/2 cup molasses
- 4 cups all-purpose flour
- 4 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon each ground ginger and cloves
- 1 teaspoon salt
- Additional sugar
- 1 package (8 ounces) cream cheese, softened
- 1 can (18 ounces) pumpkin pie mix
- 2 cups confectioners’ sugar
- 1/2 to 1 teaspoon ground cinnamon
- 1/4 to 1/2 teaspoon ground ginger
Quiche Lorraine

Heat oven to 425 degrees. Place bacon on bottom of pie crust, then cheese and onion
- Pastry for 9" pie crust
- 8 slices bacon, crisply cooked and crumbled
- 1 cup shredded Swiss cheese
- 1/3 cup finely chopped onion
- 4 eggs
- 2 cups whipping (heavy) cream
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. cayenne pepper
Creamy Caesar Dressing

Combine all with wire whisk
- 3/4 cup bottled Italian dressing
- 1 tbsp Parmesan, grated
- 1 tbsp sugar
- 1/3 cup mayonnaise
- 1 teaspoon anchovy paste (or soy sauce)
Fish Dipping Sauce

Combine all ingredients and stir well
- 5 tbsp. water
- 1 tbsp. finely grated ginger
- 1 tbsp. finely minced garlic
- 1 tbsp. dark sesame oil
- 5 tbsp. soy sauce
- 2 tbsp. finely minced scallion
- 2 tbsp. chopped cilantro
- 2 tbsp. lime, lemon or orange juice
- 2 tbsp. chopped fresh mint
- pinch of red pepper flakes
Backporch Lemonade

In small saucepan, combine sugar and 1 cup water
- 1 3/4 cups sugar
- 8 cups water
- 2 1/4 cups fresh lemon juice
- 1 tbsp. grenadine syrup
Old School Sugar Cookies

In a big bowl, combine the butter, sugar, lemon zest, salt and vanilla and mix until smooth and fluffy
- 6 sticks (3 cups) butter, softened
- 2 cups sugar
- 1 tablespoon lemon zest
- 1 teaspoon kosher salt
- 1 teaspoon pure vanilla extract
- 2 teaspoons baking powder
- 4 extra-large eggs 1 egg yolk
- 3 cups all-purpose flour more for flouring
- 2 cups cake flour
- Royal Icing, for decorating
- Your favorite sprinkles or other edible candy, for decorating
- 4 cups powdered sugar (approximately)
- 3 extra-large pasteurized egg whites
- 1 teaspoon lemon juice
- or-
- 4 cups powdered sugar (approximately )
- 3 tablespoons meringue powder
- 5 to 7 tablespoons water
- or -
- 4 cups royal icing powder
- 1/2 cup water
- Food coloring, optional
Cranberry Orange Relish

Grind cranberries, orange and apples using a meat grinder or food processor
- 3 pounds of whole fresh cranberries
- 1 large orange, peeled
- 2 large apples, peeled
- 1 8.5 ounce can crushed pineapple
- 1 cup sugar (to taste)
Crispy Southern Fried Chicken ( or fish)

Beat together egg, water and 1/4 cup crisco oil, add sugar, salt
- 1-2 1/2 lb frying chicken
- 1 egg
- 2/3 cup water
- 1/4 cup oil
- 2 tsp salt
- 2 tsp sugar
- 3/4 regular flour
