Wendy’s Chili (Copycat)

In a heavy bottomed stockpot brown the ground beef
- 2 lbs ground beef 85/15
- 29 ounces canned tomato sauce
- 29 ounces canned kidney beans not drained
- 29 ounces canned pinto beans not drained
- 28 ounces canned tomatoes chopped (not drained)
- 1 yellow onion diced
- 1 diced jalapeno de-seeded and de-veined
- 2 stalks celery chopped
- 1 green bell pepper chopped
- 1 tablespoon cumin powder
- 1/4 cup chili powder
- 1 teaspoon black pepper
- 2 teaspoons salt
- 1 cup water
- 1 tablespoon butter
Orange Flan

This caramel is different from the rest with a kick from the rosemary and zest of the orange
- For the Rosemary Orange Caramel:
- 2 Rosemary sprigs
- 1/2 Orange (zested in large strips)
- 2 cup Water
- 1 cup Granulated Sugar
- For the Custard:
- 8 ounces Cream Cheese (softened)
- 1/2 cup Granulated Sugar
- 14-ounce can Sweetened Condensed Milk
- 1 cup Evaporated Milk
- 6 Eggs (room temperature)
- 1 tablespoon Orange Juice
- 2 teaspoons Vanilla Extract
- 1/2 teaspoon Salt
VEGETABLE LASAGNE

Makes 9 servings
- 3 c. grated zucchini
- 3 c. grated carrots
- 1 Tbsp. olive oil
- 3 large eggs
- 1 c. grated Parmesan cheese
- 2 10oz. pkgs. frozen chopped spinach, thawed and drained
- 2 1/2 c. spaghetti sauce
- 1/2 pound lasagna noodles, cooked
- 8 oz. shredded provolone cheese
Texas Sheet Cake

Not 100% certain this is Mom's recipe (but darn close if it isn't)
- Sift together:
- 2 cups sugar
- 1/2 tsp. salt
- 2 cups flour
- In a saucepan, bring to a boil:
- 2 sticks of margarine
- 1 cup water
- 4 rounded tsp. cocoa
- In a small bowl, beat 2 eggs. Add 1/2 cup sour milk (1 1/2 tsp. lemon juice or vinegar plus milk to equal 1/2 cup.) Then add:
- 1 tsp. vinegar
- 1 tsp. vanilla
- 1 tsp. baking soda
Grilled Halibut with Oriental Sauce

Combine orange juice, soy sauce, ketchup, oil, parsley, lemon juice, oregano, pepper and garlic in a small bowl
- 1/4 cup orange juice
- 2 Tablespoons soy sauce
- 2 Tablespoons ketchup
- 2 Tablespoons vegetable oil
- 2 Tablespoons fresh parsley or 1 Tbsp dried parsley, chopped
- 1 Tablespoon fresh lemon juice
- 1/2 Teaspoon oregano
- 1/2 Teaspoon pepper
- 1 clove garlic, minced
- 4 6−oz. halibut steaks, cleaned
- 1 cup Apple Wood chips
Baked Potato Soup (Crock Pot)

- Garnishes:
- 2.5 lbs. Russet Potatoes, washed but not peeled. Diced into 1/2 inch cubes.
- 1 small yellow onion, diced
- 5 cloves of garlic - crushed
- 4 cups chicken stock
- 8 oz. cream cheese
- 1/2 tbsp. salt or all-purpose seasoning
- Crumbled bacon, Shredded cheddar cheese, Green onions
Crab Tassies

Take thawed pastry dough and cut into small squares and work into the cup of a mini muffin pan
- Pepperidge farm pastry sheets
- 1 lb. Crab meat
- 2 TBSP. Mayo
- 1 TBSP. Dijon mustard
- 1/2 Cup shredded Swiss cheese
- 1/4 Cup Panko bread crumbs
- Lemon juice (about 1 TBSP)
- Fresh dill (about 2 TBSP.)
Cheesecake Topped Brownies

Bake at 350 degrees in a greased 13 x 9 dish for 45 minutes
- 1 package brownie mix
- 1 (80g) package cream cheese
- 2 Tbsp. margarine
- 1 Tbsp. cornstarch
- 1 (140g) can condensed milk
- 1 egg
- 2 tsp. vanilla
Onion Beef au Jus

In a Dutch oven over medium-high heat, brown roast on all sides in oil; drain
- 1 beef rump roast or bottom round roast (4 pounds)
- 2 tablespoons canola oil
- 2 large sweet onions, cut into 1/4-inch slices
- 6 tablespoons butter, softened, divided
- 5 cups water
- 1/2 cup reduced-sodium soy sauce
- 1 envelope onion soup mix
- 1 garlic clove, minced
- 1 teaspoon browning sauce, optional
- 1 loaf (1 pound) French bread
- 1 cup shredded Swiss cheese

- 8 ounces unsalted butter
- 11 ounces brown rice flour, approximately 2 cups
- 1 1/4 ounces cornstarch, approximately 1/4 cup
- 1/2-ounce tapioca flour, approximately 2 tablespoons
- 1 teaspoon xanthan gum
- 1 teaspoon kosher salt
- 1 teaspoon baking soda
- 2 ounces sugar, approximately 1/4 cup
- 10 ounces light brown sugar, approximately 1 1/4 cups
- 1 whole egg
- 1 egg yolk
- 2 tablespoons whole milk
- 1 1/2 teaspoons vanilla extract
- 12 ounces semisweet chocolate chips
