"Grown Up" Bourbon Pumpkin No-Milk Shakes

- 2 cans coconut milk
- 2 pints Coconut Bliss vanilla coconut-based ice cream
- 2 cans (14 oz each) pumpkin
- 2 tsp pumpkin pie spice
- 2 tbsp cinnamon
- 1/2 tsp nutmeg
- 2 tbsp vanilla extract
- 2 cups Bourbon (or to taste)
Cheesy Calcutta Kale Chips

Rinse the kale and remove as much of the moisture as possible using a salad spinner or paper towels
- 3 ⁄4 pound curly kale (1 very large bunch or 2 medium bunches), stems and ribs removed
- 3 ⁄4 cup non-roasted, non- salted cashews
- 1 medium red bell pepper, seeded, de-ribbed and coarsely chopped
- 1 ⁄4 cup raw sunflower seeds, soaked overnight and rinsed
- 3 tablespoons freshly squeezed lemon juice
- 3 tablespoons nutritional yeast
- 2 tablespoons diced yellow onion
- 1 tablespoon coconut nectar or maple syrup
- 1 ⁄4 teaspoon ground turmeric
- 1 ⁄2 teaspoon sea salt
Almond Butter Rice Crisp Treats

1. Prepare an 8 inch by 8 inch square pan, by lining it with parchment paper on both sides
- 1/2 cup chunky almond butter*
- 1/2 cup brown rice syrup*
- 1 tbsp pure vanilla extract
- 1 tbsp Earth Balance (or non-dairy spread)
- 1/2 tsp kosher salt, or to taste
- 3.5 cups Nature’s Path GF Rice Crisp Cereal
- Chocolate drizzle: 1/4-1/2 cup chocolate chips, 1 tbsp almond butter, pinch salt
- Shredded coconut, to garnish
Healthy Chocolate Milkshake

Add all ingredients to a blender and blend until smooth
- 1 cup vanilla almond milk (or other milk of choice)
- 1 ripe banana
- 2 Tbsp. cocoa powder
- 1 Tbsp. agave (or honey)
- Optional: 2-3 ice cubes
Apple Cinnamon Quinoa Bake

Preheat oven to 350. Drain the dates
- 2 cups cooked quinoa
- 10-12 medjool dates (pits removed and soaked in water for 30 minutes)
- 1 small apple grated
- 1/2 cup unsweetened applesauce
- 2 flax eggs (real eggs work too)
- 1 1/2 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1/4 tsp ginger

Crockpot Lasagna Soup

- 1 lb ground beef (or vegetarian crumble)
- 3 cups of beef broth (or vegetable broth to make vegetarian)
- 4-5 cloves of garlic, minced
- 1 TB dried parsley
- 1 TB dried basil
- 1/2 cup chopped onion
- 1 , 28 oz can of diced tomatoes
- 1 , 6oz can of tomato paste
- 1 cup V8 (or any vegetable drink)
- 2 cups uncooked shell pasta
- 1/4 tsp pepper
- 1/4 tsp salt
- 1 cup of water
- Optional topping- shredded cheese
