Raw Chocolate Shortbread Bars

1. Process: Place all shortbread ingredients in the food processor
- Short Bread:
- 1 cup cashews
- 1 cup dried, unsweetened coconut
- 1/2 cup dates
- 1/4 teaspoon sea salt
- Chocolate:
- 1 cup cashews
- 1/3 cup coconut oil
- 1/3 cup maple syrup, honey or agave nectar
- 1/4 cup lemon juice
- 3 tablespoons raw cocoa powder
- 1 teaspoon pure vanilla extract
- 1 tablespoon water
- 1/8 teaspoon sea salt

- 3-4 cloves garlic (I think the more, the merrier!)
- 3 cups fresh basil leaves, packed
- 1/2 cup freshly grated Parmesan
- 1/2 cup extra-virgin olive oil
- salt and freshly ground black pepper to taste (or about 1/2 tsp. of each)

Crush the garlic well. Use a little salt as an abrasive (we use a mortar & pestle to crush garlic)
- Juice of half a lemon
- 3 tablespoons of red wine vinegar
- 1/3 to 1/2 extra-virgin olive oil (to taste)
- 4 cloves of garlic, crushed
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 head of Romaine lettuce, torn into bite-size pieces
- 1 bunch of fresh parsley, finely chopped
- 1/2 cup of grated Romano cheese
