Pumpkin Gingerbread Snack Bars

- Wet ingredients:
- 1 cup pumpkin purée
- 1/3 cup blackstrap molasses
- 1/3 cup coconut sugar (or granulated sugar of choice)
- 2 tablespoons coconut oil
- 2 teaspoons pure vanilla extract
- Dry ingredients:
- 1 + 1/2 cups gluten-free rolled oats
- 3/4 cup gluten-free all-purpose flour (I used Pamela's brand, see note)
- 1 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/4 tsp fine sea salt
- heaping 1/3 cup dried cranberries
- Cashew Butter Maple Glaze (optional):
- 2 tablespoons raw cashew butter
- 1 tablespoon agave nectar
- 1/2 tablespoon coconut oil, melted
- pinch of cinnamon, to taste
Carrot Ginger Juice

Using a juicer, juice all 3 ingredients
- 8 carrots (remove ends)
- 2 oranges (remove the outer skin)
- 1/2 inch piece of ginger peeled (I like my juice with a kick, so I used 1 full inch)

- 2 tablespoons toasted sesame oil, plus more for oiling egg pan
- 2 organic, free-range eggs
- 3 tablespoons fresh ginger, peeled and grated
- 5 cloves crushed garlic
- 1 cup diced leek, white part only
- 1 cup diced carrots
- 2 cups cooked, cold millet
- 1 tablespoon good quality soy sauce
- 1 green onions, sliced on diagonal
- 1 tomato, chopped

- 1 large sweet yellow onion, chopped
- 4 cloves garlic, minced or pressed

Line a cooking sheet with parchment paper
- 1 tablespoon fresh lime juice
- 2 tablespoons extra virgin coconut oil (such as Barlean’s)
- 2 tablespoons pure maple syrup
- 1/4 cup plus 1 tablespoon raw organic cacao powder (such as Navitas Naturals Organic Raw Cacao Powder)
- 15 large organic strawberries, washed and dried, stems left on (note: be sure to dry strawberries very, very well!)
4 Ingredient Chocolate Mousse

1. Let the coconut milk sit in a cool place overnight to let the cream and water separate
- 1 can full fat coconut milk
- 1 cup dates, pitted
- 1 teaspoon vanilla (use gluten-free vanilla, if needed)
- 5 oz, 85% dark chocolate (I used this brand. Make sure you use a gluten-free, dairy-free brand, if needed)

- 3/4 cup brown sugar
- 4 Tbsp butter
- 4 Tbsp coconut oil

- 3 tsp vanilla extract
- 3 over-ripe bananas
- 1 cup oat flour*
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
Chocolate Hemp Power Smoothie
