Ginger, Pear, Greens & Green Tea Smoothie

- 1 Anjou pear, chopped (keep the skins on)
- 1/4 cup white raisins or dried mulberries
- 1 teaspoon freshly minced ginger root
- 1 large handful chopped Romaine lettuce
- 1 tablespoon hemp seeds
- 1 cup unsweetened brewed green tea, cooled or 3 teaspoons Teavana Imperial Matcha, Japanese Powdered Green Tea
- 7-9 ice cubes
Chickpea, Avocado, & Feta Salad

1. In a medium bowl, combine chickpeas, avocado, cilantro, green onion, feta cheese, and lime juice
- 1 can chickpeas, rinsed and drained
- 2 avocados, pitted, and chopped
- 1/3 cup chopped cilantro
- 2 tablespoons green onion
- 1/3 cup feta cheese
- Juice of 1 lime
- Salt and black pepper, to taste

Mix dry ingredients together in a bowl and set aside
- Dry ingredients:
- 1 packet Simpli Gluten Free Apricot Instant Oatmeal
- 2 cups Simpli Gluten Free Whole Oat Flour
- 2 teaspoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- Wet ingredients:
- 2 eggs (to veganize, use egg substitute)
- 2 cups milk or milk substitute (gluten-free oat, soy, rice, or almond)
- 1/2 teaspoon gluten-free vanilla extract
- 5 tablespoons melted butter (coconut oil for vegans)
- 1/2 cup water
- Extra butter for frying

- 1 cup water
- 1/4 C olive oil

- 1/4 cup each finely diced carrots, red pepper, celery and onion
- 1 large yellow onion, thinly sliced
- 1/4 teaspoon olive oil
- Salt and freshly ground pepper to taste
- 1/4 teaspoon chopped or minced garlic
- 1 pound lean ground beef (90%) or extra lean ground turkey
- 1/4 cup shredded Parmesan
- 1/4 - 1/2 cup low sodium chicken broth

Bring the broth to a boil in a small saucepan over high heat
- 4 cups organic vegetable broth
- 1 leek, stems trimmed, cut into 1-inch pieces and washed thoroughly
- 2 whole carrots, cut into chunks
- 1 tablespoon extra virgin olive oil or "superfood" unrefined red palm oil
- 3 cloves garlic, minced
- Unrefined sea salt, to taste
- 1/2 cup short grain brown rice

- 3 teaspoons fresh thyme (or 1 teaspoon dried thyme)
