No Bake Pumpkin Energy Bites

- 1 cup hulled sunflower seeds
- 1 cup dates, pitted (about 7 ounces)

- 2 large carrots, scrubbed clean
- 2 tablespoons light olive oil
- 1 packet Simply Organic Crazy Awesome Veggies Sesame Ginger seasoning mix
Cauliflower Crust Pesto Pizza

Pre-heat oven to 450 degrees
- 3 cups of cooked cauliflower (minced in your food processor or blender)
- 3 eggs, whipped
- 3 teaspoons of dried oregano
- 1 teaspoon of dried basil
- 3 teaspoons of crushed garlic
- 1/2 cup of pesto (I used a jar of pesto, but pesto can be homemade as well)
- 2 cups of shredded mozzerella cheese
- Plus any topping you might like to add. Your toppings, however, must be pre-cooked because the pizza is only put back into the oven to melt the cheese.

- 1 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 tablespoons pumpkin

Preheat your oven to 300F and arrange the hazelnuts on a rimmed baking sheet
- 1 1/2 cups hazelnuts
- 1/2 cup coconut sugar
- 2 tablespoons cocoa powder, or more to taste
- 1 tablespoon melted coconut oil
- 6-8 tablespoons water
- 1 tablespoon pure maple syrup (optional)
Wack 'n Cheese

Preparation Cook macaroni al dente, drain and set aside
- 1 box (16 oz) elbow macaroni (white or wheat)
- 2-3 Tbsp olive oil and/or butter
- 1 clove garlic, minced
- 1 medium sweet onion (Vidalia or Walla Walla), diced
- 3 Tbsp flour
- 2 cups milk
- 1 can (14 oz) artichoke hearts, drained and coarsely chopped (add 2 cans if you love them)
- 1 cup shredded mozzarella
- 1 small log (4-5 oz) goat cheese
- salt and pepper
- 1/2 cup bread crumbs (Panko style recommended)
- grated Parmesan
- Great the next day with crumbled bacon mixed in.
