Spring Rolls

Before rolling, dip each rice paper in warm water for 20 seconds or so to get it pliable
- 1 pkg rice paper rolls
- 1 cup carrots sliced in thin strips
- 1 cup cabbage sliced in thin strips
- 2 green onions sliced in thin strips
- 1 cup cucumber sliced in thin strips
- 1 cup firm tofu sliced in thin strips (please make sure it is non GMO verified)
- 1/4 cup daikon sliced in thin strips
- optional: mint leaves, basil, dill
- 1/3 cup peanut butter
- 1/4 cup soy sauce or bragg’s aminos
- 1/4 cup orange juice
- 1/4 tsp fresh minced ginger
Weekday Soba Noodle Salad Recipe

1. Cook soba noodles as per package directions
- Serves 2
- 8 oz soba noodles
- 1 cup canned organic coconut milk
- 2 Tbsp. peanut butter
- 1 Tbsp. maple syrup
- 1 Tbsp. soy sauce
- 1 Tbsp. sesame oil
- 1 Tbsp. cilantro, chopped
- 2 tsp. crushed red pepper flakes
- 1 tsp. grated ginger
- 1/4 . tsp curry paste
- Sea salt and freshly cracked pepper to taste
- Garnish with green onions and salted peanuts
Super Power Chia Bread

1. Preheat oven to 325F and line a 9-inch square pan with two pieces of parchment paper, one going each way

Healthy 7 Layer Dip {Perfect for Parties!}

Place the black beans in a bowl and add the cumin, chili powder and a few shakes of salt and pepper
- Serves 15-20
- 3 cups cooked black beans (or 2 BPA free cans)
- 2 teaspoons cumin
- 1 teaspoon chili powder
- 1 cup finely chopped kale
- 2 cups finely chopped romaine lettuce
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- 4 avocados, peeled and pitted
- 1 tomato, diced
- 1/2 cup diced red onion
- 1 lime, juiced
- 1/4 cup chopped cilantro, more as desired
- pinch cayenne pepper
- 16 ounces hummus (homemade or organic store-bought)
- 32 ounces salsa, drained (I like Field Day brand)
- 1 cup goat cheese crumbled or shredded
- 1/2 cup chopped black olives
- 1/4 cup chopped scallions
- sea salt and pepper, to taste
Apple Pie Ice Cream

In a blender combine all the ingredients
- 1 can full fat coconut milk
- 1 cup crock pot applesauce
- 2-3 T maple syrup
- pinch sea salt
Easy Teriyaki Sauce

In a sauce pan, mix all the ingredients on low heat for about 5-7 minutes
- 1/2 cups soy sauce or tamari. (Please try to buy these organic)
- 1/4 cup + 1 T mirin (Japanese cooking wine)
- 1 1/2 T maple syrup
- 1/4 tsp ginger
- 1/2 tsp garlic
- 1/2 T arrowroot (this is used as a thickening agent.)
Strawberry Ice Cream

Mix the coconut milk, vanilla bean and the sweetener in a bowl
- 1 can coconut milk or 2 cups whole milk if you prefer dairy
- 2-3 T maple syrup or other liquid sweetener
- 1 1/2 tsp vanilla bean
- 1 cup sliced strawberries (fresh or frozen work)
Cocktail Sauce-EASY!

Combine ingredients and adjust to taste
- 3/4 c Organic Ketchup
- 2 T Horseradish
- 1/4 t Worchestershire Sauce
- 1 t Lemon Juice
Pumpkin Bisque

1. Steam or boil the pumpkin until tender
- Yield: Serves 4 to 6
- 2 cups pumpkin
- 1 1/2 cups diced white onions
- 2 tablespoons olive oil
- 5 cloves roasted garlic (see tip)
- 3 cups vegetable stock
- 1 1/2 tablespoons maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne
- 1/4 cup sherry wine
- 1/2 teaspoon sea salt
- Freshly ground black pepper, to taste
- 1/4 cup toasted pumpkin seeds (optional)
- Drizzle of toasted pumpkin seed oil (optional)
