- 2 Portobello mushrooms, cleaned and stemmed
- 1 tablespoon extra-virgin olive oil
- Dash of salt and pepper

- 2 slices tomato
- Drizzle of olive oil
- 4 ounces shredded mozzarella
- Handful of fresh basil leaves and crushed red pepper flakes for garnish

Roast the raw bones in a 400 degree oven for an hour
- You can get 3-4 gallons of beef bone broth out of one 3lb bag of beef bones!
- 3 pounds grassfed beef soup bones
- 1 onion, coarsely chopped
- 2-3 large carrot, coarsely chopped
- 2-3 celery stalks, coarsely chopped
- 1/4 cup apple cider vinegar (ACV) (Since it is heated up I don’t worry about it being raw but I do opt for organic.)
- Filtered cold water
Ranch Dressing

Everything into a pint jar and stir up
- 1 1/4 cup whole milk sour cream
- 1/3 cup whole raw milk (if you are dairy free or don’t have access to raw, use whole coconut milk)
- Juice of 1/2 lemon
- 1 tsp parsley
- 1 1/2 tsp onion powder
- 1 tsp garlic powder
- 1 tsp sea salt
- 1 tsp ground pepper
Sweet & Tangy Barbecue Sauce

Place all ingredients in a blender and blend until smooth
- 2 c. organic tomato sauce
- 1/2 c. water
- 1/2 c. balsamic vinegar
- 1/3 c. honey
- 1/2 Tbsp. Onion Powder
- 1/2 Tbsp. Garlic powder
- 1/2 tsp. Sea Salt
- 1 Tbsp. stoneground mustard
- 1/4 c. coconut aminos

- Add to medium sized pot:
- 2.5 cups canned coconut milk
- 1 cup cashew milk
- 3/4 cup water
- 3 tbsp red rooibos tea (I use Davidson's )
- Add to blender:
- 2 tbsp arrowroot
- 1 tsp vanilla extract
- 1/3 cup honey

- For the Dressing
- 1 tablespoon finely grated ginger root
- 1 tablespoon tamari or soy sauce
- Juice of 1 lemon
- For the Salad
- 1 ripe avocado, chopped
- 2 small cucumbers, halved and chopped
- 1 carrot, grated
- Handful of sprouts (preferably alfalfa, watercress, or sunflower sprouts)
- Handful of fresh cilantro, finely chopped
- 1 nori sheet, cut roughly with scissors into bite-size strips
- 1 tablespoon toasted sesame seeds
- Serves 1 to 2
Chocolate Mousse-Rocco DiSpirito

Place water in a small saucepan over medium heat and place a medium stainless-steel mixing bowl over the pot
- 1/2 cup water
- 3/4 oz stevia-sweetened chocolate
- 1 large egg white
- 1/4 tsp pure vanilla extract
- 1 1/2 tsp egg-white powder
- 3 tbsp monk-fruit baking mix, such as monk fruit in the raw

Applesauce Oatmeal

Add ingredients to pre-made cooked soaked oatmeal
- 4 cups cooked soaked oatmeal
- 3 TB butter or coconut oil
- 1 cup organic unsweetened applesauce (I use homemade from our fall apple picking and when that runs out I get it cheapest at our local grocer).
- 3/4 cup organic raisins (I get mine cheapest in bulk at Costco)
- 1/2 tsp vanilla extract
- 2-4 TB pure maple syrup (Optional – the applesauce and raisins are sweet enough on their own)
Gingerbread Overnight Oats

Throw all the contents in a jar and store overnight in the fridge
- 1/2 cup GF steel cut or rolled oats (steel cut for a crunch or rolled oats for a smoother oatmeal)
- 1/2 cup almond milk
- 1 tsp chia seeds
- 1 tsp flax meal
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1 tsp molasses
- 2 tsp maple syrup
- 1 tsp vanilla bean or extract
