Turmeric Roasted Cauliflower with Quinoa

Preheat oven to 400 degrees
- 1 teaspoon coriander seeds
- 1/2 teaspoon white peppercorns
- 1/4 cup olive oil
- 1 tablespoon minced garlic
- 2 teaspoons turmeric (ground)
- one head of cauliflower, cored and broken into small florets
- sea salt
- 1 medium shallot, sliced and separated into rings
- 4 kumquats, seeded and chopped
- 1/4 cup chopped cilantro
- 2 cups cooked quinoa (or other gluten-free grain)

Butternut squash is so soft that you don’t need any dairy in this recipe to make a satisfying creamy soup
- 1 butternut squash
- 2 red peppers
- 1 whole garlic bulb
- 1 yellow onion, peeled and quartered
- Olive oil (approx 1 Tbsp)
- Sea salt (approx 2 tsp)
- pinch cayenne
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 2-3 cups water are vegetable broth (more or less)
- zest & juice of 1 lime
- toasted pumpkin seeds, optional, garnish
- fresh chives, chopped, optional, garnish
Strawberries & Cream Oatmeal

Add ingredients to pre-made cooked soaked oatmeal
- 4 cups cooked soaked oatmeal
- 1/4 cup whole organic cream or coconut cream
- 1 1/2 cups strawberries, pureed (I use thawed strawberries from our summer picking and when we run out either frozen organic from Costco…or we wait until June picking again!)
- 1/2 tsp vanilla extract
- 2-4 TB raw honey (Optional – I rarely use this with the girls – the strawberries and raisins are sweet enough on their own)
Lemon Blue Cheese Brussels Sprouts

1. Heat the coconut oil in a medium-sized skillet over medium-low heat
- 1 pound of Brussels sprouts
- 1 1/2 Tablespoons coconut oil
- 1 teaspoon unrefined sea salt
- 1/4 teaspoon pepper
- zest of one lemon
- 1 1/2 Tablespoon lemon juice
- 1/8 cup blue cheese
Homemade Coconut Butter

In the food processor, blend up the shredded coconut, scraping the sides down every few minutes
- 2 1/2 cups unsweetened shredded coconut (It needs to be the full fat shredded coconut to work.)
Homemade Pistachio Milk

- 1 tsp ground caradmon seed (optional variation #1)

- 1 tsp almond extract (optional variation #3)
Roasted Winter Squash with Lentils

Soak the lentils overnight (8-10 hours) in 4 cups of water and 1 tablespoon of apple cider vinegar
- 1 1/2 cups lentils
- 1 tbsp apple cider vinegar
- 1 3-lb winter squash
- 1/4 cup olive oil
- A sprinkle of sea salt
- Freshly cracked black pepper
- 1 large onion, chopped small
- 2 garlic cloves, minced
- 1 tsp dried thyme
- 1 bay leaf
- 3 cups chicken or vegetable stock
- 5 large kale leaves, destemmed
Dairy Free Ranch Dressing

Place the cashews in water and soak overnight in the fridge
- 1 cup cashews (I used raw and unsalted)
- 1/4 cup almond milk (If you like a super thick dressing, just omit the milk)
- 1 clove garlic minced (I do this using a microplane )
- 3 T chives finely chopped
- 3 T parsley finely chopped
- 3 tsp white wine vinegar
- salt to taste
Homemade Lemon Vinaigrette

In a small bowl, whisk together all the ingredients
- 1/3 cup olive oil
- Juice of 1 large lemon
- 2 tsp maple syrup or raw honey
- 1 tsp dijon mustard
- 1 small garlic clove minced
Quick Fit Vegan Eggnog

- 1 1/2 cups almond milk
- 1/2 frozen banana
- 1/2 avocado
- 2 tsp maple syrup
- 1 tsp pumpkin spice
- 1/2 tsp nutmeg
- 1/4 tsp vanilla extract
- 1 tbsp white chia seeds (optional)
- 1 oz bourbon (optional)
