Moussaka and Steamed Broccoli

Preheat oven to 350º F. In skillet heat 1 T olive oil and sauté onions & celery until soft
- Moussaka:
- (1 c olive oil)
- 1 lg onion, chopped
- 4 stalks celery, chopped
- (1 T minced garlic)
- 14 oz can chopped tomatoes
- 15 oz can white beans, drained
- 2 T chopped parsley
- (Salt & pepper)
- 1 lg eggplant, sliced
- SAUCE:
- (2 T butter, 1/4 c flour, 1 1/2 c milk)
- (pinch of nutmeg)
- 1 egg
- 1/2 c Parmesan cheese
- Broccoli:
- 32 oz bag broccoli florets
- (1 T coconut oil or olive oil)
- (Seasoned salt, pepper)
Warm Bean & Sausage Salad

In sm bowl whisk together mustard & vinaigrette
- 1 pkg meatless sausage patties
- 1/3 c vinaigrette dressing
- 1 T Dijon mustard
- 1 med red onion, sliced
- 8 oz jar roasted red peppers,
- drained & sliced
- 2 - 15 oz cans cannellini beans,
- drained & rinsed
- 2.25 oz can sliced Kalamata olives
- 9 oz bag spinach
- 2 lbs green beans, snapped
- (Seasonings as desired)
Janet's Peas and Beans Dish

Served warm or cold, Janet's dish is tasty
- 1 cup mayonnaise
- 2 hard boiled eggs chopped up
- 3 tbs lemon juice
- 2 tbl minced onion
- 1 tsp Worcestershire sauce
- 1 tsp prepared mustard
- 1/4 tsp garlic salt
- dash if bottled hot pepper sauce
- 1 9 ounce pkg frozen french style green beans
- 1 10 oz. pkg frozen peas
- 1 10 oz. pkg frozen baby limas
Rice Curry with Egg Rolls

Preheat oven to 350o F. Sauté apples, mushrooms, onion, celery & green bell pepper in olive oil until tender
- 2 unpeeled apples, cored & diced
- 1 lb mushrooms, sliced
- 1 onion, diced
- 2 stalks celery, chopped
- 1/2 c diced green pepper
- (2-3 T olive oil)
- 4 c cooked rice
- (3 t curry powder)
- (2-3 T soy sauce)
- 1 c plain yogurt
- 1/2 c raisins
- 1 c seedless grapes
- Egg Rolls
Potato Cheddar Soup

In a lg saucepan, sauté onion and celery in butter till tender
- 1/3 c chopped onion
- 1/3 c chopped celery
- (2 T butter)
- 4 diced potatoes
- (3 c water)
- (2 T vegetable bullion)
- 8 oz shredded cheddar cheese
- (2 c milk)
- (1/4 t pepper)
- 1 head lettuce, cut into wedges
- (Favorite dressing)
Chopped Salad with Spicy Avocado dressing

Process avocado flesh with lime juice, chili-garlic sauce and olive oil
- 1 large avocado, halved, pitted
- 1 1/2 tablespoons lime juice
- 1 1/2 teaspoons chili-garlic sauce
- 3 tablespoons olive oil
- 2 cups diced cooked chicken (or vegetarian equivalent)
- 1 cup diced peeled jicama
- 1 cup diced red onion
- 1 large red bell lpepper, diced
- 1/2 cup cilantro, chopped
- salt and pepper
- Romaine lettuce leaves
Rice Croquettes

In a med skillet, melt coconut oil and add peppers, carrots, & onions
- 1 T oil
- 1/2 red bell pepper, diced
- 1/2 c shredded carrots
- 1/4 c finely chopped green onions
- (3 egg whites)
- (2 T flour)
- (1/4 t thyme)
- 2 c short grain brown rice
- (1 T soy sauce)
- (Salt & pepper)
- Green Beans
- Remaining shredded carrots from above
Cajun Omelet

Melt 2 ½ T butter on a 12” skillet over med heat
- 5 T butter)
- 1 pkg sausage patties, cooked and chopped
- 3 sm plum tomatoes, seeded and chopped
- 1/2 med onion, chopped
- 2-3 ribs celery, diced thin
- (1 T minced garlic)
- 1 T Creole seasoning, divided
- 1 doz eggs
- 1 T fresh parsley chopped
- (Non-stick spray)
- 1 1/2 c shredded cheese
- (Hot sauce)
- English Muffins
- (Butter)
- 1 lb grapes
Core Chocolate Ice Cream

In a medium bowl, stir together the instant pudding and splenda
- 1 4 oz package sugar free fat free instant chocolate pudding mix
- 1/4 cup splenda
- 1 12 oz can fat free evaporated skim milk
- 1 cup fat free milk
Rosalie's Rice Dish

- 1 7.5 ounce jar marinated artichoke hearts, drained and chopped
- 1 small jar olives, chopped
- 1 small jar sliced water chestnuts, chopped

- 1 bell pepper, chopped
- 4 green onions, chopped
