Potato, Broccoli and Sausage Skillet

With only six ingredients, you can go from cooktop to tabletop with a complete meal of meat, potatoes and veggies
- 1 box (4.7 oz) Betty Crocker® scalloped potatoes
- 2 cups hot water
- 2/3 cup milk
- 2 tablespoons margarine or butter
- 2 cups sliced fully cooked reduced-fat Polska-kielbasa sausage (from 1-lb ring)
- 1/2 cup Old El Paso® Thick ‘n Chunky salsa (any variety)
- 2 cups Green Giant® Select® frozen broccoli florets
Stuffed Baked Tomatoes

Fusilli with Caramelized Onions and Kalamata Olives

A large wok is the ideal vessel for sautéing the large amount of onions
- 4 cups sliced yellow or white onions
- 5 tablespoons olive oil
- 2 minced garlic cloves
- 1 teaspoon thyme
- 1/4 cup dry vermouth
- Salt and pepper to taste
- 1/4 cup chopped kalamata olives
- 1/2 pound fusilli pasta
- Parmesan cheese to taste
Baked Denver Strata

Arrange muffin quarters in a single layer in a greased 3 quart rectangular baking dish; set aside
- 6 English muffins, split and quartered
- 9 eggs
- 1 cup milk
- 14.5 ounce can diced green chile peppers, drained
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup diced cooked ham
- 4 green onions, finely chopped (1/2 cup)
- 1 2.5 ounce can sliced pitted ripe olives, drained
- 1 7 ounce jar roasted red epppers, drained and cut into strips
- 1 1/2 cups shredded provolone cheese (6 ounces)
- 1/2 cup shredded cheddar cheese (2 ounces)
Veggie Soup with Lemon Pepper

Combine all ingredients and slow cook for 6-8 hours

- 1 T Vegetable boullion paste
- 1 cup water
- 36 ounces Spice V-8 (3 cans)

- 2 T Mrs. Dash Lemon Pepper
Black Bean Dip with Veggies

Low fat, high fiber snacking
- 1 cup Fiber One® original bran cereal
- 1 large tomato, chopped (1 cup)
- 1 can (15 oz) Progresso® black beans, drained, rinsed
- 1/4 cup water
- 2 tablespoons lime juice
- 1/4 cup chopped green onions (4 medium)
- 1 small clove garlic, coarsely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 to 1/2 teaspoon hot pepper sauce
- 2 tablespoons chopped fresh cilantro
- Additional chopped cilantro, if desired
- 3 cups assorted cut-up fresh vegetables (such as baby carrots, bell pepper strips, cauliflower florets)
Southwestern Ranch Pasta Salad

- 1 box Betty Crocker® Suddenly Salad® classic pasta salad mix
- 1 cup Green Giant® Valley Fresh Steamers™Niblets® frozen corn
- 3/4 cup Hidden Valley® Spicy Ranch or The Original Ranch® dressing
- 1 tablespoon lime juice
- 1 1/2 cups small broccoli florets
- 1 cup grape tomatoes, halved
- 4 medium green onions, sliced (1/4 cup)
- 2 tablespoons chopped fresh cilantro
- Tortilla chips, if desired

- 1 cup miniature chocolate chips
- Chocolate bark for melting (milk, semi-sweet, dark, or white chocolate)
- Chocolate chips, sprinkles, etc for decoration (optional)
Macaroni and Blue Cheese

Preheat oven to 350. In a skillet, heat oiland cook onion until golden brown
- 1 T oil
- 1 Cup diced onion
- 10 Oz macaroni
- Non-stick spray
- 1 egg
- 8 Oz shredded Italian style cheese
- 6 Oz Blue Cheese
- 2 C half & Half
- salt and pepper
SPICY CORN CHOWDER

Combine ½ of the corn & broth in a food processor
- 16 oz bag frozen corn
- 32 oz vegetable broth
- (2 c milk)
- ⅓ c roasted red peppers, chopped
- 1 jalapeño pepper, seeded & chopped
- ¼ c chopped cilantro
- 6 oz feta cheese, crumbled
- 1 head red leaf lettuce, chopped
- ½ cucumber, save other half for Meal 7
- 2 stalks celery, chopped
- ¼ c diced red onion
- (Favorite dressing)
- 1 bag whole wheat rolls
