Butterbean Soup

Heat water in lg pot. Add vegetable bullion and let dissolve
- (8 c water)
- (3 T vegetable bullion broth paste)
- 2 -14 oz cans butter or lime beans
- 5 T sundried tomato paste
- 6 T pesto
- Cornbread
Spaghetti with Pine Nuts, Tomato & Garlic Breadcrumbs

Set a large pot of salted water over high heat and bring to a boil
- Kosher salt
- 1/2 cup extra-virgin olive oil
- 2 cloves garlic, minced
- 2-1/2 cups fresh coarse breadcrumbs
- Freshly ground black pepper
- 1/2 cup pine nuts, toasted
- 3/4 lb. dried spaghetti
- 1/4 cup raisins
- 1/4 tsp. crushed red pepper flakes
- 1 pt. cherry tomatoes, halved
- 6 Tbs. chopped fresh flat-leaf parsley
Veggie Stir Fry

- 1 Cup nonfat milk powder
- 1 Cup non-dairy creamer
- 1 Cup french vanilla flavored creamer
- 2 1/2 Cups sugar
- 1 1/2 cups unsweetened instant tea
- 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground cardamom
Cajun Black Beans with Sausage and Corn

- 8 oz smoked kielbasa sausage, coarsely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme leaves
- 1/4 teaspoon black and red pepper blend

Black Bean Cauliflower Cakes with Pico de Gallo

Cauliflower and black beans make tasty bean cakes--serve alone or with a barbecued chicken breast
- 1 bag (24 oz) Green Giant® Valley Fresh Steamers® Value Size frozen cauliflower & three cheese sauce
- 1 can (15 oz) Progresso® black beans, drained, rinsed
- 2 tablespoons chopped green onions (2 medium)
- 1 clove garlic, peeled
- 1/2 teaspoon salt
- 2 cups cooked white rice
- 1 cup coarsely crushed tortilla chips
- 1/2 cup Progresso® plain panko crispy bread crumbs
- 6 About 6 tablespoons vegetable oil
- 3/4 cup salsa or pico de gallo
- Crema or sour cream, if desired
Pico de Gallo Salad

This artful arrangement of fruit and veggies is surprisingly simple—just slice, layer and serve!
- Dressing:
- 2 tablespoons chopped fresh cilantro
- 3 tablespoons vegetable oil
- 2 tablespoons lime juice
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/8 teaspoon ground red pepper (cayenne)
- Salad:
- 2 oranges, peeled, sliced crosswise
- 1/2 cucumber, thinly sliced
- 1 small red and/or yellow bell pepper, cut into thin strips
- 1/2 medium jicama, peeled, julienned (matchstick-cut) 3x1/4x1/4 inch (about 2 cups)
- 1/8 teaspoon chili powder, if desired
- Fresh cilantro sprigs, if desired

Hard boiled eggs: In med saucepan, cover eggs w/ water, 1 t salt added
- 1 head romaine lettuce, chopped or
- shredded
- 4-6 hard boiled eggs, sliced
- 1/2 c shredded Parmesan cheese
- 1/2 pkg meatless bacon, cooked, crumbled
- (Favorite dressing)
- (1 T minced garlic)
- (1/2 t salt, dash pepper)
- (2-3 T olive oil)
- 2 c plain yogurt
- 3/4 c buttermilk
- (1 T lemon juice)
- 1/2 c walnuts
- (3/4 c cracked ice)
- 2 lg cucumbers, peeled & seeded
Cherry Tomato and Basil Pasta

Embrace the cooler fall days with a hearty bowl of pasta
- 2 pints cherry tomatoes, halved
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 small red or yellow onion or a whole shallot, diced
- 1/2 teaspoon crushed red pepper flakes
- About a dozen big basil leaves, julienned (stack them, roll them up the long way, then slice thinly across the short way)
- Small handful of other fresh herbs, minced (optional)
- 8 ounces whole grain pasta
- Salt and pepper to taste
