Ingredients

  • 1

    T oil

  • 1/2

    red bell pepper, diced

  • 1/2

    c shredded carrots

  • 1/4

    c finely chopped green onions

  • (3 egg whites)

  • (2 T flour)

  • (1/4 t thyme)

  • 2

    c short grain brown rice

  • (1 T soy sauce)

  • (Salt & pepper)

  • Green Beans

  • Remaining shredded carrots from above

Directions

In a med skillet, melt coconut oil and add peppers, carrots, & onions. Cook for apx 8 min. Place egg whites into a bowl and mix veggies into egg whites. Add flour, thyme, rice, soy sauce, salt & pepper. Add 2 more T of coconut oil to skillet and heat over med high heat. Drop 1/3 cups of rice mixture into skillet and flatten w/ spatula. Brown each side 4-7 each side. Place on plate covered w/ paper towels. Meanwhile steam green beans and carrots in sauce pan w/ 2 c water until tender. Drain. Add salt & pepper, 1 T butter, and serve along side patties.
