Pizza Burgers

Cook burgers according to directions
- Pizza Burgers:
- 2 packages Boca Burgers
- 6 slices mozzarella cheese
- 6 T pizza sauce
- 2 oz can chopped black olives
- pkg whole wheat hamburger buns
- Side:
- fries
Cheese and Veggie Quiche

Preheat oven to 350. Puree cottage cheese until smooth
- 3/4 Cup cottage cheese
- 8 oz egg beaters
- 1/3 cup milk
- 1/2 t basil
- salt
- pepper
- oil
- 1 1/2 Cup diced potatoes
- 16 oz frozen broccoli cauliflower mix, thawed drained
- 1/2 cup chopped sweet red pepper
- 1/2 C Italian blend cheese
- apple
- pear
- grapes
Fettucine Picante

Cook paste and drain. Place into a lg bowl and add the rest of the ingredients; stirring well
- 12 oz box of fettuccine noodles
- 1 c picante sauce
- 1/2 c sour cream
- 3 oz Parmesan cheese
- 2-3 T chopped cilantro
- 1 head of romaine lettuce
- Pkg of croutons
- Parmesan cheese
- Caesar Salad Dressing
Cheddar Sausage Quiche

Bake pie crust according to pkg
- Quiche:
- Cooking spray
- 1 - 9 " pie crust
- 1/2 C onion, finely chopped
- 1/2 pkg Gimme Lean Sausage
- 2 C shredded cheddar cheese
- 2 C milk
- Egg substitute to equal 8 egs
- sprinkle of nutmeg
- salt and pepper to tates
- Salad:
- 9 oz. bag of spinach
- 1/2 C sliced beets, chopped
- Balsamic Vinaigrette
- 2 bag pecan pieces
Spinach Garden Salad

Assemble all ingredients into a lg bowl
- 9 oz bag spinach
- 10 oz bag shredded carrots
- 2 avocados, peeled and sliced
- Alfalfa sprouts
- 1 cucumber, peeled & sliced
- (Optional: chopped nuts; chopped celery;
- sliced fruit)
- (Favorite dressing)
- Shredded cheese
Bloody Mary Salad

- 2 tablespoon(s) prepared horseradish
- 2 tablespoon(s) olive oil
- 2 tablespoon(s) vodka (optional)
- 1 tablespoon(s) fresh lemon juice
- 1 1/2 teaspoon(s) hot pepper sauce
- 1 teaspoon(s) Worcestershire sauce
- Salt and pepper
- 3 pint(s) grape or cherry tomatoes, cut in half
- 4 stalk(s) celery, cut into 1/4-inch-thick diagonal slices
- Celery leaves for garnish
Mushroom Fried Rice

Heat a large skillet or wok over medium heat and add 1 T
- 4 T olive oil
- 16 oz sliced mushrooms
- 3 garlic cloves, minced
- 1/2 teaspoon freshly grated ginger
- 2 large eggs, lightly beaten
- 1 1/2 cups cooked brown rice, cooled
- 2 1/2 T. soy sauce
- 1 T. toasted sesame oil
- 2 tsp. toasted sesame seeds
- 4 scallions, thinly sliced
Tosatdas

Heat chili in saucepan over med heat
- Tostadas:
- 2-15 oz cans vegetarian chili
- 1 pkg tostada shells
- Alfalfa sprouts
- Lg cucumber, chopped
- 1/2 c shredded cheese
- Sm can green chili peppers
- Taco sauce
- Corn and Black Beans:
- Onion, chopped
- (2 T oil)
- 2 c frozen corn
- 15 oz can black beans
- (Cumin, salt/pepper to taste)
Potato Stew

In saucepan heat oil adding garlic
- Stew:
- 2 T olive oil
- 2 T minced garlic
- 9 oz bag fresh spinach
- 28 oz can diced tomatoes
- 16 oz bag corn
- 1/2 t oregano
- salt and pepper to taste
- 1 t fresh basil
- 1 pkg shredded potatoes
- 1/4 c chopped parsley
- Parmesan cheese
- Side:
- French bread
- butter
Pear Salad

Combine salad ingredients
- Dressing:
- Salad
- Bag spring mix salad
- 2 ripe pears, cored and cubed
- 1/2 pint strawbertries, sliced
- 2 navel oranges, chopped
- 1/2 c feta cheese
- 1/3 cu dried cranberries
- 1/2 c chopped walnuts or pecans
- 1/4 c olive oil
- 2 T orange juice
- 2 T white wine vinegar
- 1 1/2 t sugar
- 1/4 t salt
- 1/2 t grated orange peel
