Potato Bake Patties

Preheat oven to 350 To cook potatoes: place in a pot and cover with water
- Patties:
- 2 Lbs potatoes
- 2 Med onions, chopped
- 3 T minced parsley
- 2 T Flour
- 1/2 T garlic powder
- 2 T water
- 2 T butter
- Sides:
- 2 T oil
- 16 oz sliced mushrooms
- 1 lg onion, thinly sliced
- 2 T Soy Sauce, salt and pepper

Lentil Salad with Herbed Goat Cheese

- Salad:
- 2/3 cup (140 g) dried brown lentils (or 1 (15 oz/425 g) can no-salt-added brown lentils, rinsed and drained)
- 4 cups (1 liter) water
- 1 small red onion, finely diced
- 6 oz/170 g (about 1 cup) cherry tomatoes, halved
- 2 tablespoons minced fresh parsley
- 1/4 + 1/8 teaspoon salt
- 4 oz/115 g (about 4 cups) baby spinach
- Balsamic Vinaigrette:
- 1 tablespoon good-quality balsamic vinegar
- 2 tablespoons olive oil
- 1/2 teaspoon Dijon mustard
- 1 pinch black pepper
- Herbed Goat Cheese:
- 3 tablespoons minced fresh parsley
- 2 tablespoons minced fresh chives
- 1 (4 oz/115 g) log goat cheese, sliced into 8 slices
Red beans and rice

In large skillet, bring broth and water to boil
- Red beans and rice:
- 32 oz vegetable broth
- 2 C water
- 2 C dried rice, cooked
- 1/2 C chopped onion
- 1 t italian seasoning
- 1 t cumin
- 1 t minced garlic
- 1/2 t seasoned salt
- 15 oz can red beans, drained and rinsed
- 1 large tomato, chopped
- 1/2 pkg meatless bacon, cooked and crumbled
- 1/4 C chopped cilantro
- 1/2 C shredded parmesan cheese
- Salad:
- 10 oz shredded carrots
- 1/2 C raisins
- 1 apple diced
- 1/4 C mayonnaise
- 1 T lemon juice
Bean and Potato Chowder

In Dutch oven bring water to boil
- 2 T vegetable bullion paste
- 2 quarts water
- 20 oz pkg refrigerated shredded potatoes
- 1/3 c all-purpose flour
- 1 c shredded Italian cheese blend
- 3 c milk
- Italian seasoning
- 15 oz can northern beans
Meatless Loaf

Preheat oven to 375. In a bowl, combine vegetable broth, ketchup, soy sauce, and TVP
- 2 C vegetable broth
- 1/2 C ketchup
- 2 T soy sauce
- 2 C TVP
- 1 C bread crumbs
- 1/4 C ground flax seed
- 1 T nutritional yeast
- 1 t garlic salt
- 1 t onion powder
- 1 t oregano
- 1 t basil
- Gravy mix
- 2 bunches broccoli
- 1 T oil
- salt and pepper
Caramelized Onion Pizza

•Preheat oven to 425°F
- 1 pound DOLE® Red Onions, thinly sliced (4 cups)
- 3 tablespoons olive oil plus extra for brushing pizza crust
- 1 pkg. (5 oz.) DOLE Sweet Baby Lettuces
- 1-1/2 tablespoons balsamic vinegar
- Salt and ground black pepper, to taste
- 1 (12-inch) prebaked pizza crust
- 3 to 4 ounces shredded mozzarella cheese
- 2 teaspoons chopped fresh thyme

- (Non-stick spray)
- 1 refrigerated pizza crust
- (1 T olive oil)
- (1 t minced garlic)
- (1 t dried basil)
- 1 c chopped onion
- 16 oz sliced fresh mushrooms
- 16 oz pkg mixed Chinese vegetables,
- thawed
- 3 eggs
- (1/2 c milk)
- 3/4 c ricotta cheese
Low Fat Ice Cream Recipe

Directions: Prepare your ice cream maker as directed by the machine manufacturer
- 2 cups fat-free milk
- 1 cup Splenda or other heat-safe sugar substitute
- 1/4 cup fat-free powdered milk
- 8 egg yolks or equivalent egg substitute
- 1 cup fat-free half-and-half
- 1 teaspoon vanilla extract
- 2 cups fruit (see notes), optional
- OR
- 1/2 cup chunky sugar-free fruit preserves, optional
Chocolate Dipped Shortbread

Combine the butter, 3/4 cup sugar and vanilla in a mixing bowl and beat until creamy
- 1-1/2 cups (3 sticks) butter, softened
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 3 cups flour

- 1 cup semisweet chocolate chips
