Squash and Black Bean Stew

Heat oil in heavy large pot over medium heat
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin
- 1 28-ounce can diced tomatoes in juice
- 2 pounds Kabocha or butternut squash, halved, seeded, peeled, cut into 1-inch pieces
- 4 ounces green beans, trimmed, cut into 1-inch pieces
- 1 15 ounce can black beans, rinsed, drained
- 1 tablespoon minced seeded jalapeno chili
- 1/2 cup chopped fresh cilantro
Stuffed Potatoes

Preheat oven to 375. Wash potatoes and cover each one in tin foil
- Potatoes:
- 6 large baking potatoes
- 1/2 pkg meatless bacon
- 4 T butter
- 1/2 C sour cream
- 1 C shredded cheese
- salt and pepper to taste

Meatless Pizza

1 hour before dinner, make salad: In bowl place tomatoes, cucumbers, cheese
- 2 Frozen Pizzas
- 2 tomatoes, diced
- 2 cucumbers, peeled and sliced
- 3 oz mozzarella cheese, cubed
- 1/2 C vinegar
- 3 T oil
- salt/ pepper
Kale and Red Bean Gumbo

Add greens, bell pepper, onion and tomatoes into a large Dutch oven
- Large bag greens
- 1 green bell pepper, chopped
- 1/2 C chopped onion
- 26 oz can pureed tomatoes
- 2 % boullion
- 4 C water
- 2 cans red beans, drained
- 16 0z okra
- salt and pepper

Cook rice in microwave for 3 minutes Heat oil in large skillet over medium heat
- 1 pouch Rice Expressions Organic Brown or Organic Long Grain Rice
- 2 tablespoons extra virgin olive oil
- 8 ounces asparagus, trimmed and cut into 1/2 inch diagonal piecesSalt and freshly ground black pepper
- 1 teaspoon minced garlic
- 1/2 cup grated Parmesan cheese
- 2 tablespoons toasted pignoli (pine nuts)

- 1 can (15 oz) black-eyed peas
- 1 can White Shoepeg corn, drained
- 2 cans petite diced tomatoes, drained
- 1 celery stalk, finely diced
- 1/4 cup minced red onion
- 1 small jalapeno pepper, seeded and minced
- 2 Tbsp minced fresh cilantro leaves (optional)
- 2 Tbsp plus 1 tsp apple cider vinegar (Try orange juice in place of vinegar)
- 2 tsp plus 1/2 tsp olive oil
- 1/4 tsp ground cumin

Spicy Beans

In a sauce pan w/ 2-3" of water add squash, cover, & heat
- 1 pkg Boca burger, crumbled
- (1 T oil)
- 15 oz can black beans
- 15 oz can dark red kidney beans
- 15 oz can chili beans
- 28 oz can crushed tomatoes
- 15 oz can corn, drained
- 1 pkg chili seasoning
- 1 box of cornbread mix
- 1 egg
- (¼ c oil)
- 1 chopped jalapeño, optional
SPRING GREENS & VEGGIE BITE SALAD

In a lg bowl toss greens, cheese, ½ cucumber, carrots & celery
- 2 boxes veggie bites (prepared according to directions)
- 10 oz pkg spring green salad mix
- 1 c shredded cheese of choice
- Remaining carrots from meal 1
- 1/2 cucumber, chopped (save other half for Meal 6)
- 3-4 stalks celery, chopped
- (Dressing of choice)
- Brown rice
Bleu Cheese and Macaroni

Preheat oven to 350º. In a skillet, heat oil and cook onion until golden brown
- Mac and Cheese:
- 1 lg onion, diced
- 1 T oil
- 10 oz macaroni
- 1 egg
- 8 oz shredded Italian style cheese
- 2-4 oz bleu cheese
- 2 c half & half
- Salt & pepper
- Salad:
- Head of romaine lettuce
- 1 avocado, peeled & cubed
- 1/2 cucumber, peeled & cubed
- 1 tomato, diced
- Celery
- Favorite dressing
