Fast, simple one dish entree
- 1 1 1 lb. ground beef
- 1 1 1 can tomato soup
- 1/2 1/2 1/2 cup picante sauce
- 1/2 1/2 1/2 cup water
- 6 6 1" flour tortillas (6")cut into 1" pieces
- 1/2 1/2 1/2 cup shredded Cheddar cheese
Strawberry Sherbet

Place strawberries in the workbowl of a food processor and purée
- •1 (1 lb.) package unsweetened frozen strawberries, thawed
- •1/2 Cup Splenda
- •4 large egg whites, beaten stiff
- •1 Tbsp fresh lemon juice

- 3 teaspoon oil, olive, extra virgin, divided
- 1 small onion(s), thinly sliced
- 1 cup(s) potatoes, pre-cooked, diced
- 1 tablespoon thyme, fresh, chopped
- 1/2 teaspoon paprika, smoked
- 6 large egg(s)
- 4 large egg white(s)
- 1/2 cup(s) cheese, Monterey Jack, or Manchego, shredded
- 3 cup(s) spinach, baby, roughly chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper, black ground
Vegetarian Borscht

Saute onions, carrots, and beets in olive oil over medium heat
- 1 pound beets, peeled and cut into matchsticks
- 2 medium onions, sliced into half-moons
- 2 large carrots, peeled and cut into matchsticks
- 3/4 pound white cabbage, cut thinly into shreds
- 2 Tablespoons olive oil
- 5 cups vegetable stock
- juice of 1/2 lemon
- salt to taste
- Coarsley ground black kpepper
- sour cream
- finely chopped parsley or chives for garnish.
Mushroom Onion Frittata

Heat butter in lg skillet w/ lid
- (8 T butter)
- 3 red onions, sliced thin
- 16 oz sliced mushrooms
- (2 t thyme)
- (Salt & pepper)
- 6 eggs
- 1/2 c heavy cream
- (Salt & pepper)
- 1/4 c Italian style cheese
- 32 oz bag Italian style green beans
- (2 T coconut oil, salt, pepper)
Butterbean Salad

Whisk together all ingredients for the dressing and set aside
- Dressing:
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon honey
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Salad:
- 1 (16 oz/450 g) can butter beans (preferably no-salt-added), rinsed and drained
- 1/2 English cucumber (or 2 Persian cucumbers), halved and thinly sliced
- 1/2 medium red onion, thinly sliced
- 1 roasted red bell pepper, thinly sliced (homemade or store-bought)
- 1/2 cup (30 g) chopped fresh flat leaf parsley
- 1/4 cup (15 g) chopped fresh dill
- 10 whole pitted kalamata olives (about 1/4 cup/50 g)
- 1/2 cup (75 g) crumbled feta cheese
Sweet Marsala Wine Sauce

A versatile dessert sauce that is simutaneously sweet and tart
- 1 1/2 cups sweet Marsala wine
- 1/4 cup sugar
- Zest and juice of 1 large lemon
- 1/4 teaspoon nutmeg
- 1 pound strawberries, hulled and quartered
Fajitas

Melt coconut oil in lg skillet, add onions, garlic, and fajita seasonings
- (2 T coconut oil)
- 2 onions, sliced thin
- (2T minced garlic)
- 1 pkg fajita seasonings
- 2 green bell peppers, seeded & sliced
- 2 red bell peppers, seeded & sliced
- 4 fresh green chilies, seeded & sliced
- 2-3 T chopped cilantro
- 8 oz sliced mushrooms
- 2 limes, juiced
- 12 wheat tortillas
- (Cheese, optional)
- Rice of choice, Spanish or Saffron
Spaghetti with Zucchini and Beans

Here’s a great tasting skillet dinner made with spaghetti, beans and veggies – ready in 15 minutes
- 6 oz uncooked spaghetti
- 3 cups chopped zucchini (2 medium)
- 1/3 cup water
- 1 tablespoon tomato paste
- 1/4 teaspoon kosher (coarse) salt
- 1/8 teaspoon coarse ground black pepper
- 1 can (15.5 oz) great northern beans, drained, rinsed
- 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
- 1/2 cup crumbled feta cheese (2 oz)
TOMATO SOUP

Try pre-cooking the tomatoes (maybe roasting?) and don't use the seeds
- (2 T butter, 1 T olive oil)
- 1 lg onion, sliced thin
- 2 lbs tomatoes, quartered
- 3 T tomato paste
- Fresh parsley, chopped
- (3 T vegetable bullion paste/3 c hot water)
- (1 -2 t sugar)
- Heavy cream
- Lg loaf French bread
