Kale Salad

A delicious recipe shared with my sewing group by Berita, who grows her own kale
- 1 bunch kale
- 1/2 red onion
- 1/2 red pepper
- 1/2 cup dried cranberries
- 1/2 cup nuts (almonds, walnut, pinenuts--whatever)
- Dressing to taste
Carrot ginger soup

This comforting, medicinal soup is pure love in a bowl! Serve it as a first course or in larger portions to make it...
- 2 tablespoons unsalted butter
- 2 pounds carrots, peeled and diced (the better the carrot, the better the soup!)
- 2 onions, peeled and diced
- 2- 2-1/2 tablespoons fresh ginger, peeled of its skin and finely chopped
- 2 cloves garlic, finely chopped
- 6 cups low-sodium chicken stock
- 1/2 cup heavy cream
- Kosher salt to taste
- 1 cup fresh cilantro
- 1/3 cup extra-virgin olive oil
- 1 teaspoon hot chili oil (can be found in most grocery stores in the Asian food section)
Sopa de Frijol

Soup recipe from Rosarita
- 2 cans (16 oz each) Rosarita® Low Fat Black Bean Refried Beans
- 2 cups water
- 6 slices bacon, chopped
- 1/2 cup chopped yellow onion
- 1-1/2 tablespoons chopped fresh cilantro or 1 small sprig fresh epazote
- 1 tablespoon chopped fresh oregano leaves
- 1/4 teaspoon salt
- 1 tablespoon Pure Wesson® Vegetable Oil
- 4 corn tortillas (6 inch), cut in half, then into thin crosswise strips
- 1/3 cup Mexican cream
- 1 lime, cut into 8 wedges
Pesto-Garbanzo Soup

- 2 15.5 ounce cans garbanzo beans
- 1/2 cup prepared basil pesto
- 1/2 cup tomato paste
- 3 Tablespoons vegetable boullion paste
- water
- 3 onions, coarsely chopped
- 3 Tablespoons olive oil
Cranberry Dessert Squares

These easy dessert squares can be customized by using fruit butter or pie filling instead of the cranberry sauce
- 1 box yellow cake ix
- 8 Tablespoons melted butter
- 4 Tablespoons butter, cut into small pieces
- 3 eggs
- 1 can cranberry sauce with whole berries
- 2 Tablespoons milk
- 2 Tablespoons purpose flour
- 1/4 cup sugar
- 1 teaspoon cinnamon
Chilaquiles

Preheat oven to 350o F. Spray a 9x13 casserole dish w/non-stick spray
- (Non-stick spray)
- 1 c frozen corn
- 2 c frozen mixed vegetables
- 2 c prepared salsa
- 8-10 corn tortillas, torn in pieces
- 8 oz softened cream cheese
- 2 eggs
- (3 T cornstarch)
- 8 oz extra firm tofu, crumbled
- 7 oz can green chilies
- 4 oz shredded cheese
Spinach Salad

Hard boil three eggs. Peel and slice
- 3 hard boiled eggs, sliced
- 10 oz bag spinach
- 1 lg tomato, chopped
- ½ pkg meatless bacon, cooked &
- chopped into small pieces
- 2 oz bag slivered almonds
- (Favorite dressing)
- 1 box of boil in bag rice
- (Butter)
- (Salt/pepper)
- Dinner rolls
Potato Patties

Preheat oven to 350o F. To cook potatoes: Place potatoes in a pot
- 2 lbs potatoes1 c chopped onion
- 3 T minced parsley
- (2 T whole wheat flour)
- (1/2 t garlic powder)
- (2 T water)
- (2 T butter)
- (2 T butter)
- 16 oz sliced mushrooms
- 1 med onion, sliced thinly
- (2 T soy sauce)
- (Salt/pepper)
- Lg bunch of broccoli
- Dinner rolls
PEAS & CABBAGE

Prepare cornbread according to directions
- 2-15 oz cans black-eyed peas
- 2-3 T chopped or pureed jalapeños
- (1 T coconut oil)
- ½ pkg meatless bacon, cooked &
- chopped
- 2-16 oz bags shredded cabbage
- (½ c water)
- (Seasoned salt)
- (Pepper)
- 1 19 oz box cornbread mix
- 2 eggs
- (Milk or water)
Green Chili Casserole

Preheat oven to 325 F. Spray a 9" casserole dish
- Green Chile Casserole:
- cooking spray
- 12 corn tortillas
- 4 ounce can chiles, diced
- 2 Cups shredded cheese
- Red Bell Pepper, diced
- 6 green onions, sliced
- egg substitute to equal 4 eggs
- 2 C buttermilk
- Side dish:
- Broccoli
- 8 ounces slice carrots
- butter
- salt and pepper
