PASTA & BEAN SOUP

Combine all ingredients, except the pasta, into a lg stockpot
- soup:
- 2 cans great northern beans
- (1/4 c olive oil)
- (1 T minced garlic)
- (8 c water)
- (2 T vegetable broth paste)
- 2 cans diced Italian style tomatoes
- 1/4 c chopped fresh parsley
- Remaining macaroni from Meal 6
- (Salt & pepper to taste)
- Pita Chips:
- 3 oz grated Parmesan cheese
- (1/3 c Olive oil)
- (Italian seasonings)
- (Minced garlic)
- (3 T butter)
- (Salt)
- Pkg of pita bread, split
Black Bean Brownies

Preheat oven to 350 F. Grease an 8x8" pan and set aside
- 15 ounces black beans, drained and rinsed
- 2 whole bananas
- 1/3 cup agave nectar
- 1/4 cup unsweetened cocoa
- 1 tbsp cinnamon
- 1 tsp vanilla extract
- 1/4 cup raw sugar (optional)
- 1/4 cup instant oats
Battenberg Cake

- Cake:
- 1 cup butter, softened
- 1 cup white sugar
- 3 eggs
- 1/4 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 2 drops red food coloring
- 1 cup apricot preserves
- Almond Paste:
- 2 cups ground almonds
- 3 cups confectioners' sugar
- 1 egg, room temperature
- 1 1/2 teaspoons lemon juice
- 1/4 teaspoon almond extract
Mexican Stuffed Baked Potato

Wrap washed potatoes in a square of aluminum foil
- Salad:
- 6 lg baking potatoes
- (Aluminum foil)
- Sm can green chilies, diced
- 1/4 c black beans
- 1/4 c corn
- 1/2 c shredded cheddar cheese blend
- 3 - 4 T imitation bacon bits
- Sour cream
- 4 oranges, peeled and cut in small pieces
- 20 oz can cubed pineapple
Sausage Skillet Dinner

Place both potatoes in pot of boiling water and cook for 5 minutes
- 1 medium sweet potato, diced
- 2 medium potatoes, diced
- 2 T water
- 1 T oil
- 1 medium onion, diced
- package Gimme Lean Sausage
- 1 T minced garlic
- 1 bay leaf
- 1 T Italian seasoning
- 1 tart apple, diced
- bag shredded carrots
- 28 oz diced tomatoes
Beer Battered Grilled Cheese Sandwiches

- 6 slices hickory-smoked bacon
- 4 slices rustic white bread
- 2 slices provolone cheese (3/4 oz each)
- 2 slices Cheddar cheese (3/4 oz each)
- 1 egg
- 3/4 cup pale ale beer
- 1/4 cup Gold Medal® all-purpose flour
- 1/4 teaspoon chipotle chili powder
- 1 tablespoon butter
Loaded Roasted Potato Casserole

- 2 bags (19 oz each) Green Giant® Valley Fresh Steamers® Value Size frozen roasted potatoes, broccoli & cheese sauce
- 3/4 cup shredded pepper Jack cheese (3 oz)
- 1/2 cup crumbled cooked bacon
- 1/2 cup sour cream
- 1/4 cup chopped green onions (4 medium)
Gumbo Salad

- Head of romaine lettuce, chopped
- 1/2 container of spinach
- 1 cucumber, sliced
- 8 oz sliced mushrooms
- 2 avocados, cored & sliced
- 1 apple chopped,
- 2 pears, chopped
- 2 oz slivered almonds
- 3 oz feta cheese
- (Favorite dressing)
- Fresh whole grain
Steak Stir-Fry

Combine white wine vinegar, oil, soy sauce, crushed red pepper, lemon peel and cilantro
- 1/4 C white wine vinegar
- 2 T oil
- 2 T soy sauce
- 1/2 t crushed pepper
- 1 1/2 t grated lemon peel
- 1 T chopped cilantro
- 12 oz linguine
- 16 oz stir fry mixed veggies
- 1 T oil
- 1 pkg meatless steak strips
- 4 oz cashew pieces
- (Rolls)
Rice Crust Pizza

Preheat oven to 350º. CRUST: In lg bowl combine cottage cheese, flour, onions, ½ t basil, carrots & rice
- 3/4 c grated carrots
- 1/2 c cottage cheese
- (1/3 c whole wheat flour)
- 2 T finely chopped onion
- (1 t dried basil)
- 2 1/2 c cooked brown rice
- 8 oz tomato sauce
- 6 oz shredded cheese blend
- 3 oz feta cheese
- 8 oz sliced mushrooms
- 2 c grated carrots
- 1 lg cucumber, peeled, cubed
- (Olive oil)
- (Salt & pepper)
