New Spring Veggie Salad

Place new potatoes in a saucepan and cover w/ water
- 2 lbs red new potatoes
- 15 oz can navy beans, drained
- 1/2 container cherry tomatoes, halved
- 3/4 c walnut pieces
- (3 T cider vinegar)
- (2 t wholegrain mustard)
- (4 T olive oil)
- (1/2 t sugar)
- Bunch of asparagus
- Spinach
- 2 thinly sliced apple
- 1 lb grapes
- 1/2 bag chips, your choice
Potato Cheddar Soup

A soup and salad meal
- 1 c chopped onion
- 1/3 c chopped celery
- (2 T butter)
- 4 lg potatoes, diced
- 3 c vegetable broth
- 8 oz cheddar cheese
- 1-2 T chopped basil
- (2 c milk)
- (1/4 t pepper)
- 1 head iceberg lettuce, cut into wedges
- (Favorite dressing)
Papa's Fritatta

Potatoes and eggs for brunch or dinner
- Cooking spray
- 1 carton Golden Grill Hashbrown potatoes
- Hot water for reconstituting potatoes
- 1 large onion, diced
- 2 Tablespoons olive oil
- 2 cans (4.5 oz. each) chopped green chiles
- 4 eggs
- 1 cup shredded cheddar cheese
- 1 cup minced fresh cilantro
- 2 cups sour cream
- 1 avocado, pitted, peeled, and sliced
- 2 tomatoes, sliced
Mexican Skillet Dinner

Quick, spicy, and satisfying
- 12 ounces chorizo
- 2 cups frozen whole kernel corn
- 1 14.5 ounce can diced tomatoes with juice
- 1 cup uncooked instant rice
- 1/2 cup water
- 2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1 15-counce can pinto beans, rinsed and drained
- 3/4 cup shredded Mexican-style cheese blend
Almond Garlic Pasta

Puree blanched almonds, garlic, water and 1/4 t salt until smooth
- 4 oz slivered almonds
- 2 cloves garlic, minced
- 3/4 cup water
- 16 oz pasta
- 2 T. olive oil
- 3 T. butter
- 16 oz. frozen peas
- 1/2 c shredded parmesan
- 1 T fresh lemon juice
- 1/2 C basil
- 1/3 C mint
- 1/3 C chopped roasted almonds
- 9 ounce bag baby spinach
- 1 can mandarin oranges
- Balsamic vinaigrette
- Garlic bread
Blackeyed Peas and Rice

Prepare rice according to package directions
- 2 c dried rice
- 1/2 pkg meatless bacon
- 16 oz black-eyed peas
- (1 c water)
- 15 oz can stewed tomatoes
- 4 oz can tomato paste
- (2 T ketchup)
- (1/2 t thyme)
- (1 t seasoned salt, 1/2 t pepper)
- (1+ t hot sauce)
- Romaine lettuce leaves, torn
- 1 cucumber, peeled and sliced
- 1 chopped tomato
- (Favorite dressing)
Black Bean and Tomato Salad

Combine black beans, tomatoes, mozzarella, onion and cilantro
- 1 can Black beans, drained and rinsed
- 8 ounces grape tomatoes, halved
- 4 ounces mozzarella cheese, cubed
- 1/2 red onion, diced
- 1/2 cup cilantro, chopped
- 2 Tablespoons olive oil
- 1/4 cup lime juice
Pasta Salad with Feta

Cook pasta. Assemble all ingredients into lg bowl
- Box whole wheat penne pasta
- 1/2 pkg cherry tomatoes, halved
- 4 oz feta, crumbled
- Sm can kalamata olive slices
- 2 oz pkg sliced almonds
- 1/2 pkg meatless bacon, cooked and crumbled
- (1/4 c Italian dressing)
- Pkg of whole wheat rolls
- (Butter)
Black-eyed pea salad

Mix all ingredients. Chill
- 1 can Blackeyed peas, drained
- 1 Avocado, diced
- 1 bunch green onion, sliced
- 1 tomato, diced
- 2 Tablespoons cilantro, chopped
- 1 jalapeno, minced
- 1/2 Cup Italian dressing
Broccoli and White Bean Salad

- 2 Cups broccoli florets
- 3/4 cup white beans, drained
- 1/2 cup onions, thinly sliced
- 1 Tablespoon olive oil
- 1/4 teaspoon salt
- 1 1/2 Tablespoons lemon juice
- 1 English muffin
- 1/4 cup parsley, chopped
