A delicious recipe shared with my sewing group by Berita, who grows her own kale.more
cup dried cranberries
cup nuts (almonds, walnut, pinenuts--whatever)
Dressing to taste
Wash kale, and remove stem completely from each leaf. Tear kale into little pieces about 1" square. Chop onion and red pepper. Toss kale, vegetables, cranberries and nuts together. Berita--who gave me this recipe--always uses organic Lemon-Ginger dressing from Costco, but I think it works well with a raspberry vinaigrette, or any other sweet dressing to contrast with the tartness of the cranberries and the bitterness of the kale.
