Mexican Fried Ice Cream

Instructions Set container of ice cream out to lightly soften
- Ingredients
- 3 1/2 3 1/2 1/2 cups crushed cornflakes
- 3/4 3/4 3/4 cup sugar
- 1 1 1/2 stick butter or 1/2 cup
- 1 1 1 quart vanilla ice cream
- 16 16 16 oz cool whip
- 1 1 1 tsp cinnamon
- 1/4 1/4 1/4 cup honey
- chocolate syrup caramel syrup, whipped cream, and cherries for garnishing (optional)
Lentil Chili

In a large heavy duty dutch oven, heat olive oil over medium heat
- NGREDIENTS
- 2 Tbsp. olive oil
- 1 medium onion, chopped
- 1 large red bell pepper, chopped
- 5 cloves garlic, minced
- 4 tsp. chili powder
- 1 (16 oz.) bag of brown lentils
- 2 (14.5 oz.) cans no-salt diced tomatoes
- 1 bay leaf
- 2 (32 oz.) cartons vegetable stock or chicken stock
- 1/3 cup fresh chopped cilantro
- sea salt and fresh ground black pepper
- Optional toppings: sour cream, cheddar cheese, croutons, tortilla chips, avocado
Brown Eyed Baker Bread

In the bowl of a mixer, stir to dissolve the yeast in ¾ cup of the warm water, and let sit for 5 minutes
- 4 1/2 teaspoons instant yeast (two 0.25-ounce packets)
- 3/4 cup + 2 2/3 cups warm water, divided
- 1/4 cup (50 grams) granulated sugar
- 1 tablespoon salt
- 3 (43 grams) tablespoons unsalted butter, cubed, at room temperature
- 9 (1.3 kg) to 10 (1.4 kg) cups all-purpose flour
- 3 tablespoons unsalted butter, melted, for brushing
Spinach and Chard Calzone

Cut off and discard bottom few inches of tough chard or spinach stems
- The calzone recipe is this: (I put a layer of pepperoni over the stuffing and some spoonfuls of my red sauce in addition to this recipe). My red sauce- tomatoes, paste, pizza sauce seasoning, sugar and garlic and onion blended
- Swiss Chard or Spinach Calzone
- 1 bunch Swiss Chard or Spinach, washed ( I use a bunch of both)
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 large cloves garlic, minced
- Salt and pepper to taste
- 1 lb. ricotta cheese
- 2 eggs
- 4 large basil leaves, cut coarsely
- 1/2 cup grated Parmigiano cheese
- 1 1/2 cups mozzarella cheese
Zee Bar Cookies (Date-Sweetened)

Preheat oven to 350F. Line a cookie sheet with parchment or a silpat, or lightly spray with nonstick cooking spray

- 1 cup rolled oats (old-fashioned or quick-cooking)–GF if needed
- 2 tablespoons flaxseed meal (ground flaxseeds)
- 1/2 teaspoon baking soda
- 1 (semi-packed) cup whole, pitted dates
- 1/2 cup natural, unsweetened nut or seed butter of choice
- 1/2 cup plain nondairy or dairy milk
- 1 teaspoon vanilla extract
- Optional: 1/2 cup semisweet chocolate chips or chopped dried fruit
Classic Pot Pie

Make the crust: In a food processor, pulse together flour, sugar, and salt
- FOR THE CRUST
- 1 1/4 cups all-purpose flour (spooned and leveled), plus more for work surface
- 1 teaspoon sugar
- 1/4 teaspoon fine salt
- 1/2 cup (1 stick) cold unsalted butter, cut into 1/2-inch pieces
- 3 to 5 tablespoons ice water
- FOR THE FILLING
- 5 tablespoons unsalted butter
- 1 medium yellow onion, diced small (1 1/2 cups)
- 4 medium carrots, diced small (2 cups)
- 2 garlic cloves, minced
- 1/2 cup all-purpose flour (spooned and leveled)
- 4 cups low-sodium chicken broth
- 1 cup frozen peas
- Coarse salt and ground pepper
- 3 cups shredded cooked chicken (15 ounces)

SHEPHERD'S PIE

An easy, traditional shepherd's pie recipe made of ground lamb and topped with mashed potatoes
- yield: 4 to 6 servings
- prep time: 45 minutes cook time: 50 minutes total time: 1 hour 45 minutes
- 2 tablespoons olive oil
- 1 large sweet onion, finely chopped
- 1 1/2 carrots, finely chopped
- 1 1/2 pounds ground lamb
- 1 tablespoon tomato paste
- 1 teaspoon Dijon mustard
- 1 cup beef, lamb or chicken stock, warmed
- Salt and pepper, to taste
- 1 recipe Perfect Mashed Potatoes (or 4 cups prepared mashed potatoes)
