Fried rice

Gimmesomelove - fried rice
- 3 tablespoons butter, divided
- 2 eggs, whisked
- 2 medium carrots, peeled and diced
- 1 small white onion, diced
- 1/2 cup frozen peas
- 3 cloves garlic, minced
- salt and pepper
- 4 cups cooked and chilled rice (I prefer short-grain white rice)
- 3 green onions, thinly sliced
- 3-4 tablespoons soy sauce, or more to taste
- 2 teaspoons oyster sauce (optional)
- 1/2 teaspoons toasted sesame oil
Amazing Paleo Mayo

For the Mayonnaise: Place all ingredients in a narrow container or jar
- For the mayonnaise:
- Ingredients
- 1 cup avocado oil, olive oil, or a mixture
- 1 egg yolk
- 1 Tbsp dijon mustard
- Juice of 1/2 a lemon
- 1/2 tsp salt
- For the ranch dressing:
- 1 cup mayonnaise (see above or substitute your favorite recipe)
- 1/4 cup coconut milk
- 1 tsp apple cider vinegar
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 Tbsp fresh dill or 1 tsp dried dill
- salt and pepper, to taste.
Flourless Chocolate Walnut Oatmeal Cookies

Preheat oven to 350°F. In a large bowl, cream together the butter, white sugar, and brown sugar until smooth
- 1/4 cup butter, room temperature
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 1 1/2 teaspoon vanilla
- 1 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup Trader Joe's Organic Creamy Peanut Butter
- 6 oz Trader Joe's Semi-Sweet Chocolate Chips
- 3/4 cup walnuts or pecans, roughly chopped
- 3 cups Trader Joe's Rolled Oats
Peanut Sauce

Heat in sauce pan until thick
- Saos Sate Katjang (Peanut Sauce)
- 1 can Coconut Milk (full cream not low fat)
- 6 tbsp crunchy Peanut Butter
- 1 tsp Sambal Oelek
- 1/2 tsp ground cumin
- 1/2 tsp powdered Laos/ galangal powder - I can give you!
- 1/2 tsp garlic powder
- 4 tbsp lemon juice
- 6 tbs ketjap/ kecap manis (sweet soy sauce)
- Prepare with jasmine rice or rice noodles and steamed vegetables and choice meat on top.
Sweet Potato 'Buns' and Avocado Lime Mayo

When heating the oil for the sweet potatoes, you have to heat the oil until it 'shimmers'
- Buns:
- 1 large sweet potato (about 3 cups, shredded)
- 3 large eggs
- 1 teaspoon cumin
- 2-4 tablespoons coconut oil
- Avocado and Lime Mayo:
- 6 tablespoons mayonnaise
- Juice from half of a lime
- 1 ripe avocado
- Salt and pepper to taste

- 1/2 tsp. xanthan gum (omit if flour blend already has xanthan or guar gum in it)

Tapioca Pudding Recipe
