- Ingredients
- 1/4 cup butter
- 1 small yellow onion ,finely chopped (about 1 cup)
- 2 cups very finely chopped good quality flavorful celery (about 5 large ribs, organic recommended for optimal flavor).
- 1 large clove garlic ,minced
- 1/3 cup all-purpose unbleached flour
- 1 1/2 cups good quality chicken broth
- 1 1/2 cups whole milk (or use 3/4 cup milk and 3/4 cup cream for even tastier results)
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/8 teaspoon freshly ground pepper

Heat the oven to 400°F. Grease the sides and bottom of a 9- or 10-inch springform pan with cooking spray
- Cooking spray for the pan.
- For the dough:
- 3/4 cup cottage cheese (4% milk fat)
- 1/3 cup buttermilk
- 1/4 cup granulated sugar
- 2 oz. (4 Tbs.) unsalted butter, melted
- 1 tsp. pure vanilla extract
- 9 oz. (2 cups) unbleached all-purpose flour; more for rolling

- For the cakes:
- 4 large eggs, room temperature
- 1 tablespoon milk
- 1 cup (128g) granulated sugar
- 8 ounces (227g) unsalted butter, plus more for greasing tins
- 1 cup (128g) all-purpose flour
- 1 1/2 teaspoons baking powder
- ¼ teaspoon salt
- 1 teaspoon pure vanilla extract
- For the Filling:
- 1 cup (236ml) heavy whipping cream, cold
- 10 ounces (284g) strawberry jam
- 1 teaspoon powdered sugar
Mexican Fried Ice Cream

This "fried" ice cream pie isn't fried at all
- Use paddle attachment on my Kitchen Aid Mixer set on the lowest setting to fold it.
- Ingredients
- 1/2 container of 1.5 quart vanilla ice cream (can substitute reduced calorie or frozen yogurt)
- 4 oz. Cool Whip® (can substitute low fat or fat free)
- 1/2 teaspoon ground cinnamon
- 2 1/2 cups crushed corn flakes
- 4 Tablespoons butter
- 3 Tablespoons granulated sugar
- 1/4 teaspoon salt
- 1/4 cup chopped cashews (or almonds)
- 8 /12 maraschino cherries, for garnish
- chocolate syrup, for garnish
- Redi-Whip, for garnish (or can substitute cool whip)
