Chewy Brownies

Preheat oven to 350°F. Spray a 9-inch x 13-inch pan with nonstick cooking spray
- Ingredients
- 1/3 cup cocoa
- 1/2 cup plus 2 tablespoon boiling water
- 2 ounces unsweetened chocolate
- 4 tablespoons butter (1/2 stick), melted
- 1/2 cup plus 2 tablespoons vegetable oil
- 2 large eggs
- 2 large egg yolks
- 2 teaspoons vanilla
- 2 1/2 cups sugar
- 1 3/4 cups all-purpose flour
- 1 teaspoon salt
- 1 cup chocolate chips
Swiss Chard or Spinach Calzone

Cut off and discard bottom few inches of tough chard or spinach stems
- The calzone recipe is this: (I put a layer of pepperoni over the stuffing and some spoonfuls of my red sauce in addition to this recipe). My red sauce- tomatoes, paste, pizza sauce seasoning, sugar and garlic and onion blended
- 1 bunch Swiss Chard or Spinach, washed ( I use a bunch of both)
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 large cloves garlic, minced
- Salt and pepper to taste
- 1 lb. ricotta cheese
- 2 eggs
- 4 large basil leaves, cut coarsely
- 1/2 cup grated Parmigiano cheese
- 1 1/2 cups mozzarella cheese
Blueberry Breakfast Bars

1. Preheat the oven to 350 degrees F
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1/2 cup packed dark brown sugar
- 1 1/4 cups regular rolled oats
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup butter, cubed
- 1 egg white, lightly beaten
- 3/4 cup fresh blueberries
- 1 10-ounce jar blueberry preserves (about 1 cup)
Thai Ice Tea

Bring water to boil and add the thai tea mix or the 4 black tea bags
- (For my glass container I use 9 cups water to 1/2 bag of tea (loose leaf Thai tea) or 2 cups tea and 1 3/4 cups sugar)
- 1 cup (80g) Pantai Thai Tea Mix or 4 Black Tea bags
- 4 cups (950ml) Water
- 3/4 cup (150g) Sugar
- half and half (some folks also use coconut milk, whole milk, sweetened condensed milk)
Elderberry syrup - cold and cough

- Ingredients
- 2/3 cup dried black elderberries (about 3 ounces)
- 3 1/2 cups of water
- 2 Tablespoons fresh or dried ginger root
- 1 teaspoon cinnamon powder
- 1/2 teaspoon cloves or clove powder
- 1 cup raw honey (we get from our farmer's market)

Deodorant

Melt shea butter and coconut oil in a double boiler over medium heat until barely melted
- 3 T Coconut Oil
- 3 T Baking Soda
- 2 T Shea Butter
- 2 T Arrowroot (optional)
- Essential Oils (optional) I prefer lemongrass

Sweet Potato Buns (Paleo)(gluten free)

Shred the sweet potato using either the shredding blade of a food processor or box grater

- 1 large sweet potato (about 3 cups, shredded)

- 2-4 tablespoons coconut oil
Lentil and Nut Roast - Lyns

Roast: Soak the lentils for 1 hour in cold water then drain well
- 2/3 C. red lentils
- 1 C. hazelnuts
- 1 C. walnuts
- 1 large carrot
- 2 celery stalks
- 1 large onion
- 4 oz. mushrooms
- 4 Tbs. butter
- 2 tsp. mild curry powder
- 2 Tbs. tomato ketchup
- 2 Tbs. Worcestershire sauce
- 1 egg, beaten
- 2 tsp. salt
- 4 Tbs. fresh parsley, chopped
- 2/3 C. water
Zucchini Carrot Muffins

Gently toss together carrot, zucchini, apple, coconut, almonds and orange peel; set aside
- 2 cups shredded carrot
- 1 cup shredded zucchini
- 1 cup shredded, peeled apple
- 3/4 cup sweetened shredded coconut
- 1/2 cup chopped almonds or cashews
- 2 teaspoons grated orange peel (optional)

- 1-1/4 cups sugar
- 1 tablespoon ground cinnamon
- 1 tsp cardamom
