Thai Chicken Sate with Peanut Sauce

Slice the chicken breast across grain with at least 1 inch wide each piece
- Marinade:
- 2 pounds skinless and boneless chicken breast, sliced 1 inch wide x 4-5 inches length
- 20 wooden skewers, soaked in water for 30 minutes
- 1/2 cucumber, sliced
- 2 tablespoons fish sauce
- 1.5 tablespoons minced garlic
- 2.5 teaspoons sweet soy sauce
- 2.5 teaspoons sugar
- 1/4 teaspoon white pepper
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cayenne pepper
- 2 teaspoons Masaman curry paste
- 1/3 cup coconut milk
- Peanut Sauce:
- 1 teaspoon masaman curry paste
- 2 tablespoons fish sauce
- 3 tablespoons tamarind juice
- 3 tablespoons creamy peanut butter
- 1.5 tablespoons sugar
- 1 teaspoon paprika powder
- 1/2 teaspoons garlic powder
- 2 cups coconut milk
- 1/2 cup crushed peanuts
- Note: You can find Masaman curry paste in a pack at any Asian Grocery Stores
Dutch Oven Baked Beans with Crisp Bacon

Make your own baked beans from scratch with this easy recipe
- 3 tablespoons vegetable oil
- 5 garlic cloves, minced
- 1 Pablono chili, chopped
- 1 medium onion, chopped
- 1 tablespoon fresh ginger, minced salt
- 2 cups sweet and sticky B.B.Q. sauce. ( your favorite, but I recommend " Baby Ray's Honey )
- 2 15 1/2 ounce cans baked beans ( again, your fav.)
- 1 (19-ounce) can red kidney beans, drained and rinced
- 1 (19-ounce) can pinto beans, drained and rinced
- 2 to 3 pounds lean bacon, thin sliced

- 1 9" Prebaked Pie Shell
- 4 Cups Sliced and Clean Strawberries
- 1/2 pkg (3oz) Strawberry Jello
- 1 Cup Sugar
- 2 T Cornstarch
- 1 Cup Boiling Water

- 1 1/4 cups sifted all purpose flour
- 1 1/2 cups sifted cake flour
- 1/2 teaspoon baking soda
- 1 1/2 teaspoon baking powder

- 2/3 cup vegetable oil
- 1/3 cup vegetable shortening at room temperature
- 3 tablespoons good quality vanilla extract

Cream butter, brown sugar and sugar together in a large bowl
- 3/4 cup butter softened
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1 small pkg. pumpkin spice instant pudding mix
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. baking soda
- 2 1/4 cup flour
- 1-2 cups semi-sweet chocolate chips
Straberry Salsa

Chop strawberries into small cubes and add them to a mixing bowl
- 1 lb of fresh strawberries
- 1/2 cup of chopped almonds
- 1 1/2 tsp brown sugar
- Zest of 1/2 medium lime
- Juice of one medium lime

- 1 lb boneless, skinless chicken breasts
- 4 oz pepper jack cheese, shredded (you can use up to 6 oz)
- 1 c frozen spinach, thawed and drained
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 tbsp Italian breadcrumbs
- Sea salt, to taste
- Freshly ground black pepper, to taste
