- 1 medium (about 2 pounds) acorn squash, cut into 2-inch pieces

- 1 1/2 pound(s) skinless salmon fillet, cut into 4 pieces
- 1 small (about 1 pound) bunch kale, thick stems discarded, leaves chopped

1. Preheat oven at 350°F, prepare a cookie sheet with a parchment paper and grease it well
- 2 cup almond flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 whole sweet potato (boiled and peeled)
- 1 cup baby carrots
- 2 medium bananas
- 1 tablespoon olive oil
- 1 tablespoon vanilla extract
- 1/8 teaspoon almond extract

- Vanilla Ice Cream Bars:
- 1 cup raw cashew pieces, soaked in water for 2 hours
- 1 cup water
- 1/4 cup melted coconut oil
- 2 tablespoons honey
- 1 tablespoon maple syrup
- 1 tablespoon vanilla extract
- Chocolate Coating:
- 5 tablespoons cocoa powder
- 5 tablespoons melted coconut oil
- 1/4 cup maple syrup

- 2/3 cup raw honey

- 1 teaspoon vanilla extract
- 2/3 cup blanched almond flour

- 2 c almond meal
- Scant 1/2t sea salt
- 1/4 t baking soda
- 1/2 t cinnamon - optional but delicious
- 5 T coconut oil or butter melted (mixture is good; last time we did 3 of coconut and 2 of butter)
- 3 T honey or maple syrup (mixture is good)
- 1 T vanilla
- Between 1/2 and 2 t water as needed if the batter is too dry
- 5 or 6 T stevia-sweetened chocolate chips

I adapted this recipe from my Heart Swirled White Chocolate Raspberry Cheesecake because it’s my favorite
- 18 Oreos finely crushed to about 1 3/4 cups*
- 2 1/2 Tbsp butter, melted and divided
- 2 (8 oz) pkg cream cheese, softened
- 1/4 cup + 2 Tbsp granulated sugar
- 2 large eggs
- 1/2 tsp vanilla extract
- 1 1/3 cups white chocolate chips
- 1/2 cup + 1/3 cup heavy cream, divided
- 25 fairly small, fresh strawberries (or more if cutting more squares)
- 2 Tbsp powdered sugar
Brisket Slow-Cooked in Coffee and Brown Sugar

- 1 medium onion, peeled and quartered, stem end left intact
- 1 pound new potatoes (about 12)
- 1 pound medium carrots, cut into 2 1⁄2-inch lengths
- 2 1/2 pounds beef brisket, trimmed
- kosher salt and black pepper
- 1 6-ounce can tomato paste
- 1/2 cup brewed black coffee
- 2 tablespoons Worcestershire sauce
- 2 tablespoons packed light brown sugar
- 2 tablespoons chopped fresh flat-leaf parsley
- Notes: I added parsnips and used dried parsley. Also, doubled the sauce as I had a 6.5 pound brisket. Also added more onions, probably 4. Can't overdo onions.
