- 1 1 1 Tbsp flour, matzo meal or gluten-free flour

Quinoa Salad with Pecans and Cranberries

- 2 c. dry quinoa (TJ 16 oz pkg is 2 1/2c)
- 3 c. veg broth, low sodium if possible (used 4(?) cup veg broth 1 c water)
- 2 T chopped fresh parsley
- 2 T chopped fresh chives (caramelized onions instead)
- 2/3 c. chopped pecans
- 2/3 c. dried cranberries
- 4 T freshly squeezed lemon juice
- 4 T olive oil
- fresh group pepper and salt to taste
- 1 large chopped onion, caramelized
- 1 can mandarin oranges, drained
- 1-2-cloves garlic, minced (TJ frozen garlic cubes)

ALMOND PULP DOUBLE CHOCOLATE COOKIES

Pumpkin Ice Cream, Two Ingredient, Dairy Free

The blender is my best friend when it comes to ice cream
- 4 large or 6 small very ripe bananas (lots of black spots), frozen
- 1/2 cup fresh or canned pumpkin puree (this canned pumpkin doesn't have undisclosed ingredients like many supermarket canned pumpkin!)
- Optional: raw honey, pure maple syrup, non-irradiated cinnamon or chocolate chips (I love these chocolate chips, they are dairy and soy free!)

- 1 red bell pepper, roughly chopped
- 1 lb butternut squash
- 1 lb Brussels sprouts, hulled and halved
- 2 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper

- 4 oz mixed greens

- 1 avocado
- 1 small garlic clove
- Juice of 1 lime
- 1/4 cup olive oil
- 1/2 tsp salt

Spice Cake, Paleo with Maple-Cashew Frosting

- MAPLE CASHEW FROSTING
- 1 cup Unsalted Cashew Butter (or make your own with 2 cups Unsalted Cashews)
- 1 cup Palm Shortening
- 1/3 cup Grade B Maple Syrup
- NUT-FREE SPICE CAKE
- 12 Eggs (better if they are at room temperature)
- 1/2 cup Extra Virgin Coconut Oil, melted
- 1/2 cup Palm Shortening (or substitute softened Unsalted Butter)
- 1 cup Honey
- 1/2 cup Arrowroot Flour
- 3/4 cup Coconut Flour, sifted
- 1 tsp Salt
- 1/2 tsp Baking Soda
- 1 tsp Ground Cinnamon
- 2 tsp Ground Ginger
- 1/2 tsp Ground Nutmeg
- 1/2 tsp Ground Allspice
- 1/2 tsp Ground Cloves
- 1/2 tsp Ground Cardamom
- extra Palm Shortening and Arrowroot Flour for dusting the cake pans
