Spaghetti Squash, Creamy Leek Casserole (Paleo)

- 1 prepared large spaghetti squash (3-4 cups spaghetti), see note below. Click here for my Perfect Baked Spaghetti Squash instructions.
- 1/2 head cauliflower, cut into florets
- 2 medium parsnips, peeled and chopped (2 heaping cups chopped parsnips)
- 1/2 cup coconut milk
- Salt, to taste, or Herbamare seasoning, available here (an organic herbal salt - highly recommended!)
- 2 Tbs. ghee or coconut oil
- 2 shallots, minced
- 1 large or 2 small leeks, thinly sliced
- 1/4 cup fresh dill, measured and then chopped
- Optional: 1 lb. ground sausage of choice or 2 cups shredded chicken

- DRESSING:
- 1/2 c parsnips, peeled, diced
- 1/2 c carrots, peeled, diced
- 3 redskin potatoes, diced
- 2 sweet potatoes, diced
- 1 c diced onions (red, shallots, white, yellow or pear)
- 1 c green apples, diced
- CAN USE DIFFERENT VEGETABLES SUCH AS BEETS, TURNIPS, ZUCCHINI, RED, GREEN OR YELLOW PEPPERS
- 1/2 c olive oil (can use less)
- 1 T rosemary, sage, thyme marjoram oregano (any mix of them for a total of 1 TABLESPOON)
- 1/4 c white balsamic vinegar (or substitute white wine vinegar or cider vinegar)
- 2 T apple juice
- 1 T Dijon mustartd
- 2 T roasted onions from recipe above, chopped fine, mashed
- 1/2 c olive oil
- salt and pepper to taste

- 1 15oz 1 15oz 15oz can black beans, rinsed and drained
- 1 1 1 clove garlic, minced
- 1 1 1 Mirepoix from Trader Joes
- 1 1 1 sweet potato, cubed and cooked

ROASTED PEAR AND BLEU CHEESE SALAD w/ DATE HONEY WITH VINAIGRETTE

- Dressing:
- 4 Bosc pears peeled and cut in 1/2
- 1-2 Tablespoons olive oil
- 1-2 Tablespoons sugar
- Kosher salt
- 1 Cup crumbled bleu cheese or goat cheese ( I omit cheese)
- 2 cups candied pecans (I have used toasted almonds slivers—not sure on the amount, whatever looks right)
- 1 Costco box mixed greens
- 4-5 small Israeili cukes with peel, sliced thin
- 1/3 cup date honey called Silan (available at Mediterranean markets—Babylon at Maple and Orchard Lake carries it)
- 1/3 cup olive oil
- 1/3 cup white wine vinegar
- 1 garlic clove pressed

- 8 cloves garlic, minced
- 1 tablespoon cumin seed, toasted and ground
- 2 tablespoons ancho chile powder
- 1 teaspoon cayenne pepper
- 1½ cups tomato paste
- 2 (15-ounce) cans pinto beans, rinsed and drained (3 cups)
- 1 (15-ounce can) black beans, rinsed and drained (2 cups)
- 1 (15-ounce can) garbanzo beans, rinsed and drained (2 cups)
